1 large can pure pumpkin
1.5 cups low or nonfat cottage cheese
1.5 cups Splenda
1.5 cups Eggbeaters
2. teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt
Process all in the food processor until well-mixed and smooth. Spray six custard cups with PAM. Divide mixture equally in cups. Bake at 325 degrees for 45 minutes or until top is lightly browned.

but then again...with my sweet tooth I prefer to mix FF cottage cheese with jello powder (any flavor) and it is soo good. I also will top it with all bran for fiber. Those davinci or torani SF syrups are yummy to add too-i like the fruit ones (strawberry or raspberry)
for a not so sweet idea I mixed CC with salsa, brown rice and soy meat. it looked absolutely disgusting but was pretty tasty (to me)
A few years ago there was no way you could get me to touch the stuff but I love it now!
For lunches sometimes I'll open a can of tomatoes and drain. Then I microwave them enough to be warm but not hot. Then I pour some cottage cheese on top and some parsley flakes and there's my lunch with some milk and a salad. Yum...Now I'm craving some and I have no cottage cheese in my house right now

1......cottage cheese with 1tsp of ketchup
2.......cottage cheese with 1 tsp of strawberry jam
3........cottage cheese, half can of crabmeat, heinz chili sauce
4.......cottage cheese, cocoa powder, splenda, sliced fresh strawberries in a fajhita wrap
5........cottage cheese added to the final stages of scrambled eggs and a splash of worchester sauce (sp?)
6........a nice fresh green tossed salad, heaping spoonfull of cottage cheese on top with dressing on the side.
I'm the same as someone else who says they like pineapple with their cottage cheese. We also do peach halves with cottage cheese, or mandarin oranges with cottage cheese, etc. My mom use to have this when I was growing up every Sunday night along with spaghetti. So, it's comfort food for me.

Not recently, but I have done this MANY times. (Being that tortilla chips are my main weakness!) Have to say nowadays that cut up tomato and S&P is a favorite. I also like Red Robin seasoning mix on it. I will have to try the crab meat and chili sauce!!
A good friend of mine makes cottage cheese enchiladas - fills the tortillas with a mixture of cc, green chilies, sauted onions and some taco seasoning, rolls them up and pours green enchilada sauce over them and a little monterey jack cheese on top. They are super yummy. She's vegetarian, but you could add shredded chicken too. I might have to play around with it now since I'm remembering how yummy they are! It's been years.
How large is your can of pumpkin? Do you mean the 29oz one or the 15oz one? I learned my leason that everyones definition of 'large' can of pumpkin or pineapple or whatever isn't always my definition the hard way with a few recipes. Also, could you use regular egg white instead of egg beaters? I'm too cheap to buy egg beaters...besides, my cat needs an egg a day and she doesn't mind if its only the yolks
I personally don't like cc, but I can eat it in recipes like this one. I just have to hide it- my Mom loves the stuff and just about every time I buy some to bake with, she eats it before I get a chance...even if its just the next day when I need it. But if I ask her if she wants me to buy her any, the answer is always no-lol

I've been thinking of tweaking the basic recipe to make a baked brown rice pudding (maybe with a few raisins), minus the pumpkin and changing a few of the spices ...
OK....maybe this is too simple, but I do cottage cheese w/ splenda, cinnamon, nutmeg, and some chopped nuts (preferably pecans). I also like it with chopped tomatoes & cucumbers, S&P, and balsamic vinegar; kinda like a greek salad version.
