Default Cheesecake

I know this is sorta weird sounding, but I found a decent cheesecake recipe using tofu. The texture seems more custard like to me though, but it is good.

1 lb of tofu
1/2 cup brown sugar
1/3 cup honey
1/4 cup oil
2 tbsp lemon juice
1 tbsp white flour
1 tsp vanilla
pinch of salt

dump all of the above ingredients into a blender and puree. You can fold in additional fruit if you are so motivated. I added apricots to mine. Then pour it into a graham cracker crust and bake it at 350 for about 45 minutes, or until it forms cracks around the crust.

the nutritional info that came with the recipe estimated it being about 9 points a serving, but I got 5 points using lower fat tofu, less honey, and a low fat crust. You could probably lower the oil a bit more too...it is very sweet, so the missing honey wasn't noticeable.

It is edible, and it tastes good. I was scared to eat it, but my mom had the first slice and went back for more. The real test is my dad...he hates tofu. Hee hee. And of course, I'm not going to tell him what is in it!
