CRUNCHY OVEN BAKED CHICKEN
1 1/2 c. crushed Ritz crackers
3/4 c. Parmesan cheese
1/4 c. chopped parsley
1 clove garlic, minced
2 tsp. salt
1/8 tsp. pepper
8 boned chicken breasts, halved
1 c. butter
Combine cracker crumbs, cheese, parsley, garlic, salt and pepper. Dip chicken in butter. Roll in cracker mixture. Place in 9 x 13 inch pan. Pour remaining butter over chicken. Bake uncovered at 350 degrees for 1 hour. Don't turn.
I DONT LIKE CHICKEN BREAST, BUT THIS RECIPE WAS EXCELLENT. THE ONLY SUBSTITUTIONS I MADE WAS FOR THE SALT I USED KOSHER SALT AND FOR THE RITZ CRACKERS,BECAUSE THEY ARE NOT LOW CARB, I USED 4C LOW CARB BREAD CRUMBS. IT WAS DELICIOUS. HOPE YOU ALL ENJOY IT.
