Spaghetti Sauash.
I have made this for the last 5 years. Even if we were not trying to be "healthy". The hubby loves it. Take one spaghetti squash and poke with knife or fork all over. Microwave for 10 - 15 min. (to test doneness w/ mitted finger if caves a little when poked its done).
While squash is being nuked, saute green peppers and onions with cooking spray. Lightly season to taste with seasoning salt and pepper. When squash is done split in half (lengthwise) and remove seeds. Scrape out the remaining squash with fork (creating stringy lengths).
Combine Squash with pepper / onion mixture. Let cook together just a bit. Add to plate and sprinkle with part skim mozzarealla. Serve hot!
So good! And so clean!
