On spinach/greens:
- Squeezed oranges (adds just enough liquid and flavor)
- Juice from rethawed frozen berries + a few thawed frozen berries
On Asian salads (shredded red cabbage, cilantro, cucumber, etc):
- 1 tbs peanut butter, heated till melted, mixed with a tad of water
- Dash of rice vinegar + soy sauce + brown sugar + lemon
- Sweet chili sauce (available in bottles at the grocery store, delicious over the Asian salad I mentioned above)
On Mexican/cabbage salads:
- Refried beans (homemade if possible) + yogurt + lime juice + cilantro + diced onions/tomatoes (Ok, this really isn't a salad dressing, but rather a whole meal... but it's a topper that helps me eat lots of cabbage without dressing
