Default Roasted vegetables: Will they keep?

I really don't want to use the oven for an hour every night in this heat. If I roast 2-3 meals worth of vegetables of various kinds will they be good as leftovers?

Sure will. I roast big batches on Sunday and eat them through out the week. They may not be as crisp as you'd like later on so you might under cook them just a tad and then pop them in the oven each night for 10 minutes or so to crisp up and reheat.

I love them leftover, even cold, so I'll slice them and put them in a salad.

I love to roast eggplant in 1 inch chunks, and it freezes really well
