Blackbean Chicken Chili
I thought I would post a new recipe I tried out today. (Don't ask why I made Chili when its 85 degrees). It turned out really well.
Blackbean Chili
1 can blackbeans
1 can corn
2 cans diced tomatos
1 packet chili seasoning
3 - 4 chicken thighs (skinless)
Place the first four ingredients in the crockpot for an hour or two with the whole chicken thighs, then remove the thighs and dice into small peices and place back into the crockpot for another 3-4 hours.
I served mine with cute onions and a sprinkle of cheddar cheese.
