Okay, this is a really FABULOUS find (even if I do say so myself!
), for a woefully under utilized fruit.
I haven't had rhubarb in YEARS and not at all unless it was in a pie!
Because, when I'd look at those stalks in the supermarket I'd think "how in the heck do you eat this???"
But, I just came across a really quick and easy simple receipe that makes eating it a pleasure.
Take about 1/2lb rhubarb, cut it into 1" pieces. Set aside.
Then take 1/4c brown sugar, 2tbspn water and a sprinkle of ginger and put all these ingredients in a pot and bring to a boil under the sugar is dissolved. Then add in the rhubarb and cover the pot and put on low heat for about 10min until rhubarb is mushy.
Then eat and enjoy! It is about 200cal for the whole thing and very, very yummy. You can eat by itself, put on top of ice cream, put on top of yogurt, or whatever you can think of.
