Default not a veggie person. need help with phase 1

hello all.

i'm trying to figure out a good way to complete phase one despite the fact that I'm really not a huge veggie person.

here are the main veggies I eat:

corn
spinach (anyone have a good sautee'd spinach or spinach omelet recipe?)
mustard greens (i'm used to cooking them using some sort of meat to flavor; any suggestions of an alternative)
cabbage greens


i eat most fruits.

i also have a question about eggs. are regular egg beaters a sub for egg whites, or does egg beaters have an eggwhite product??



can we use i cant believe it's not butter spray on plain oat meal or grits??

Hi,

You can us I Can't Believe its Not Butter spray sparingly. I use it on about every veggie I fix along w/ some greek seasoning and a little Lawrys season salt. I couldn't survive without some seasoning on my veggies. Do you like broccoli? I steam that and add my spices along w/ brown rice for dinner a lot. I also occasionally add a little low sodium soy. Do you like fried rice? Thats another filling and fast dish. I saute some onion and use a little minced garlic along w/ a tiny bit of olive oil when I fix my spinach. Again I add either greek or italian seasoning and my lawrys. You can also saute your spinach in a little veggie or beef broth instead of oil. I don't eat beans so I eat grits or oatmeal sometimes for dinner. Egg beaters have an egg white product and my grocery has a generic version of it too (its cheaper). I don't like mustard greens so I can't help you with that. What about making some veggie soup? I don't care for carrots or celery but it seasons up the veggie/beef broth pretty well so I put in some veggies I don't like, cook it all down and add some tomato juice (make sure it pure tomato juice without added salt or sugar) and then I put it in a blender. I add it back to the soup pot and then add the veggies I like along w/ some brown rice. It makes a really thick soup and tricks you into eating things you don't like. believe me, you can't even tell. I also throw a few slices of tofu in the blender because I need the protein. Check out the recipes section - the pizza is really good in my opinion. Good luck. Lem

Hi Chanta

I'm doing phase 1 just now and I dont eat nearly enough veggies!!

My usual menu is


B Fruit Smoothie (fruit, protein powder and skimmed milk)
S Banana
L Veggie Soup, Apple
S Grapes
D Porridge with lf yoghurt, strawberries
S Carrots with yoghurt dip

I know I should eat more veggies, and because I dont eat beans either I add a scoop of protein powder to my morning smoothie

I love it, especially all the fruit and it really seems to suit me!
