Default Pork Parmesan

I made this up so I will guess at the amounts.

Pork loin or tenderloin - sliced thin
SF plain tomato sauce (1 tin) with whatever spices you like (garlic, s&p, italian seasoning etc..)
Parmesan cheese
LF mozzarella cheese

I spray a fry pan and heat to med-high.

Quickly sear/brown both sides of each slice of pork - you do not have to cook all the way through. Set aside on a plate.

Place one layer of browned pork slices in bottom of casserole dish.
Spread seasoned sauce over each slice - just enough to cover.
Sprinkle parmesan cheese liberally over sauce.
Layer the rest of pork slices, sauce and parmesan until finished.
Top with grated mozzarella cheese.

Bake at 350 about 20 mins - until cheese bubbles.

I had extra sauce that I heated and served over spaghetti squash.


Leftovers were good too!
