I just started phase this week. I'm on day 5. I found a great chili recipe. I hope that it was phase 1. My husband and my daughter even liked it.
1 large onion
2 tbsp olive oil
2 large or 3 small bell peppers
3 cloves garlic
1 1/2 tbsp chili powder
1 tbsp cumin
1 tsp salt
3 cans of your choice of beans
1 can vegetable broth
2 cans diced tomatoes
Saute onions & peppers in olive oil, add garlic at last minute of saute. Add remainingingredients and simmer until the consistency you like
We enjoyed it and my husband just added cayenne pepper to his own bowl since he likes it spicy. I'm going solo on this diet but still have to cook for my family. Trying to make recipes we can all enjoy and keep me from cheating.
By the way, what happens if you cheat during phase 1. Does that blow the whole thing and you have to start over on the two week time slot?
