Hey Chicks got this from SBD.com daily newsletter. I know there are some chili recipes on here already but they all seem to be different. Enjoy! I think I'll make some for dinner with turkey. I tried it one time before and could not really tell the difference.
Heat Things Up in the Kitchen
During the cold winter months, a week's worth of chilled salads may not be all that appealing. To fight off freezing weather, try experimenting with robust ingredients like beans, lean meats, and nuts. With a little creativity, even those in Phase 1 (the strictest Phase) can create warm, hearty South Beach Diet-friendly meals. To get started, try this recipe-it's appropriate for all Phases (and vegetarians, too):
Veggie Chili
Makes 8 (1-cup) servings
Ingredients
2 bell peppers (red, yellow, or green), diced
1 medium onion, chopped
2 teaspoons olive oil
12 ounces soy/meat alternative crumbles
1 tablespoon chili powder (or more to taste)
1 teaspoon ground cumin
1 4-ounce can chopped green chilies, drained
1 14.5-ounce can diced tomatoes
1 15-ounce can black beans, drained
1 15-ounce can kidney beans, drained
1 15-ounce can tomato sauce
Instructions
Heat the oil in a large saucepan over medium-high heat. Add the peppers, onion, and garlic and heat until they soften. Add remaining ingredients. Bring the mixture to a boil, then reduce the heat. Simmer for 30 minutes, stirring occasionally.
