  • Chris, good going on changing the menu! I'm trying to do healthy (or semi-healthy) on the foods that I'm taking. Keeping the points value of the foods in my mind should help me out. Need to stay away from the desserts that my aunt doesn't make. She makes them sugar-free, so less points that way.

    Just got home from the high school play. It was so funny! My niece had a lead part, and she is really quite good. Hope she continues her interest in theater in college next year.
  • Good morning-that mammo thing worked out fine-they wrote the letter before the new set of pics-only thing is that they SENT it 2 weekis after the new set of pics-without my saying anything, they said they would try to fix that-computer generates the letter-must need to be reformatted. One time a guy was fixing our stove and he showed me how to fix my computer.
    Stomache is not good-I think it's stress. I have been told about the yeast thing a long time ago. I do have some Activa in the frig but it's made of milk products!!!I wopuld imagine the yeast has something to do with IBS but I didn't think allergies. Still stuffy-

Alcoholism is a tough disease. You need a program!! I was in al-anon for 23 years-that's for people who ;ive with someone who has a drinking problem. Great program.

    Mima - yeast has a LOT to do with allergies. Go to the Library and get the book called " The Yeast Connection". Yeast is responsible for a lot of sinus problems as well. It also has a LOT of the same symptoms as FM. The problems with Activa is that it has SUGAR and that feeds yeast.

    Thanksgiving is a challenge alright, but you CAN eat well on a few points. Just make lots of veggies.

    I made a great dish last night. We had company and they kept going back for more, so it must have been good. I will get the recipe and post it. It is called and Upside down Veggie Casserole.

    Joanne - I hope that your eyes have improved greatly by now.

  • Mima, glad to hear about the letter being from the first test and not the 2nd. I've had people recommend Activa to me recently. Might have to give it a try.

    Well, now I read Anne's post about it having sugar in it, and I'm trying my best to stay away from sugar. I'm taking a big container of green beans today, and a pineapple/angel food cake that I heard about at WW. Also taking deviled eggs. My SIL is making a vegie tray so that will help. I'd love to have the recipe for the vegie casserole.

    Tim just got out of bed. Must be nice to sleep that late! The dog had me up at 6:00. Well, I need to get moving so I can finish getting ready. We're supposed to be at my brother's house and ready to eat at 12:30.

    Hello Everybody...
    The eyes are coming along.. Not as quick as I would like but what the heck.
    We will be going to the daughters house in n/Fl. for Thanksgiving. We will go on Tuesday and probably come home Sat or Sun. Who cares . We are retired.. Our son is going to his wifes mothers. That is the way of things when they get married. This will be the first holiday that we will not all be together. I will try to watch the points.. We plan to be healthy. We agreed to only make 3 pies. That should go fast. Everyone is trying to watch the weight.
    It is cool here now. The hubby is having a fit to turn off the heat. He sees dollar signs every time it turns on. Tough!
    I am not getting excited about holidays. Too much work involved. Everyone will come here for Christmas. That is a lot of work. I suggested that everyone bring or cook something. I doubt that will be the case. I still have to plan incase they don't. I don't ever count on it. It is a good thing I don't . I am 73 years old. I wonder why things seem harder these days!I know my IBS will kick in big time.
    Enough whinning... I hope everybody has a Great Thanksgiving in case I don't get back on till after then..

  • Mime I am so glad to hear the mammo letter was a goof up. If only they knew what that kind of goof does to a person.

    Tammy don't you hate when you have a day you can sleep in but the pets still think you need to be up early. My girls (3 black cats) got me up at 7 this morning thinking they needed to eat. Of course DH is still in bed sleeping. If only they would bother him to get up.

    Vegetable Upside-Down Casserole

    Everyone likes fruity upside-down cakes; why not try the same approach with vegetables? This casserole, which is fun to make and even more fun to eat, has quickly become a family favorite. It’s a great way to use up small amounts of fresh or frozen vegetables; you can keep it simple or come up with more sophisticated combinations, as tastes dictate.--By Nava Atlas

    3 to 4 cups cut-up vegetables of your choice
    2 tablespoons light olive oil
    1 cup whole wheat pastry flour
    ¼ cup wheat germ
    ½ teaspoon baking powder
    ½ teaspoon baking soda
    1 teaspoon salt
    ¾ cup low-fat yogurt or soy yogurt
    ¾ cup low-fat milk, rice milk or soy milk
    1 tablespoon vegetable oil
    ½ cup grated cheese or non-dairy cheese of your choice, optional

    Sauté the vegetables in olive oil until just tender. Set aside.

    Preheat the over to 375 degrees Fahrenheit. Lightly oil and shallow, round two-quart casserole or a 9”x13” baking pan.

    Combine the flour, wheat germ, baking powder, baking soda and salt in a mixing bowl. Make a well in the center and add the yogurt, milk and vegetable oil. Stir together until well mixed.

    Pour the vegetables into the prepared pan. Sprinkle with the cheese, if using, then pour the batter evenly over the vegetables, gently smoothing it out with a spatula.

    Bake for 30 to 35 minutes or until the top is golden and firm. Let stand for about 10 minutes, then cut into wedges or squares to serve.

    Makes four to six servings.

    Variations
    Here are some combinations my family likes. Use your own mix or keep it simple and use just one vegetable. As a rule of thumb, use 3 to 4 cups of vegetables (with the exception of tiny veggies like corn and peas, which have more density) and sauté in a wide skillet until just tender. If using onions, sauté until golden before adding other vegetables.

    Corn, tomato and scallion Sauté 2 to 2-1/2 cups cooked fresh corn or frozen corn kernels, thawed; 2 medium tomatoes, diced; and 1 to 2 scallions, sliced thinly, in a little olive oil, just until the tomato has softened slightly. If you’d like, add one 4-ounce can chopped milk green chilies.

    Broccoli and onion Sauté 1 medium-large onion, quartered and sliced thinly, in a small amount of olive oil until golden. Add 4 cups bite-size broccoli florets and a bit of water. Cover and cook, stirring occasionally, until the broccoli is just beyond tender-crisp. Drain off any liquid.

    Squash and spinach Sauté 1 medium zucchini or yellow summer squash, cut lengthwise and sliced thinly into half-circles, and 1 or 2 garlic cloves, minced (optional), in a little olive oil until just tender. Add 8 to 10 ounces chopped fresh spinach leaves. Cover and cook just until the spinach wilts, about 1 minute. If desired, add a small quantity of chopped fresh herbs.

    Other sautéed vegetables that work well are mushrooms, carrots, peas and cauliflower. See what’s in the vegetable drawer of your refrigerator and have fun!
  • Thanks, Anne. Yes, they know who mom is but just once I would like to forget. Nahhhh they mean to much to me. I love how they know when I am not feeling well. They come and want to be petted and loved. Most of the time it makes me feel better.

    I did great at my brother's house for the meal! I did have some desserts that my SILs made, but extremely small servings. Tim will be leaving in about an hour, then he'll be home again on Tuesday night.

    Great to hear from you Joanne. I tell people exactly what to bring-being easier on the men of course.
    We are now almost up to 18 people-give or take 4. SIL was going to be home with dh and sister-and n. So all the bros and sisters will be here-which is fine but other b doesn't know his bil is coming and they don't get along. Haha/ 70 x 7 is how many times you should forgive!!!!!!And more.
    Good recipe, Anne!!! I read something about a med that kills bacteria =-bad stuff-for over 10 weeks but my ins. doesn't pay for it. I had to throw away the Activia because it was out of date,
    Tammy, we used to have everyone together because we had small families. Not like now-we never get rid of people. Step relatives all over the place. Uncle Paul comes from the divorce I had but he is my kids uncle. And a bachelor. We were always like that-used to invitre this old guy phil who had no family. My br and I used to help him out. He ended up in a nursing home and now he's gone.
    Wow for that weight loss, Chris. I am fortunate-my husband takes care of the dog during the night.
    The dog that will live forever! We don't know what we will do with him when we have to go into a nursing home!!! ha-he is almost 17. Acts like a puppy!!!! Too funny.
    Leah lost her job again. Brad is very angry -going to suggest counseling. She is working for him today-already planned. She needs something!!!

  • IT'S SNOWING!!! I love snow. But I hate how I feel when it snows. I'm hurting so bad and I have so much I need to do. Family is coming here to eat Thursday. Have to go to town tomorrow ... get nails done and grocery shop. Then Wed. have to go see Jenna and Kaylyn's little Thanksgiving play at school then school is out for Thanksgiving so I have to get Jenna and Ross and bring them home with me for the rest of the day so Wed. is shot. That means I need to get most of my cleaning, shopping and baking done today and tomorrow. But I just don't feel like it. My ankle is hurting so bad I can barely walk and I don't even want to talk about my hands, wrists and shoulders. I cut my hair this morning and it took me an hour ... pure agony.

    I hope Sami lives as long as your dog, Mima ... but doubt it. She's a golden retriever & stays outside but we bring her in the basement when it gets cold or the weather is bad. They don't usually live as long as 17 years. That's a long time for any dog ... you're very lucky.

    Well ... back to my nasty house. UGH! At least my livingroom is clean!

    I prayed that my step-sons heart would be softened and he called his daughter!! PTL!
    Now I have to pray that there are no incidents with all Brad's family here!!!!!It would be a miracle.

    3 doctor's appts today-pickup of 2 scripts at doc's office, lunch with my gf, and dropping off 2 presents-all in Holden where I lived for 28 years. And then the big shopping.
