Trying to make this today! Yummmmmm ....I love pecan pie! I know Phyllo can be difficult to work with........


recipe renovation: pecan pie



Prep Time | 20 min
Cook Time | 45 min
Level of Difficulty |
Moderate

Ingredients


8 pieces phyllo dough
4 serving cooking spray, or enough to coat
dough
3/4 cup pecan halves, chopped lengthwise into
3 pieces each
4 medium egg white(s), lightly beaten
1/3 cup light corn syrup
2/3 cup brown sugar, firmly packed
6 Tbsp reduced-calorie margarine, melted

Instructions


1.Preheat oven to 350°F. Lightly coat a
9-inch round baking pan
with cooking spray.

2.Cut phyllo sheets in half diagonally to
form 2 equal-size triangles.
Place 1 sheet in prepared pan, lightly
coat with cooking spray,
and top with another sheet of phyllo,
placing corners just to the
right of previous corners. Repeat with
remaining sheets, so
you're covering the pan with a fan of
phyllo. Bake until lightly
browned, about 10 minutes.

3.Reduce oven temperature to 325°F. Combine
remaining
ingredients in a medium bowl; pour into
crust. Bake, uncovered,
about 35 minutes or until firm. Cover
halfway through baking
process if crust becomes too brown. Cool
in pan.

Or you could use this pie crust recipe from WW.....


Pie Crust
1 Point Per 1/6 of Pie crust

3/4 cup flour
3 tablespoons soft, whipped diet margarine -- tub
style
2 tablespoons powdered sugar

Spray 9" pie plate with Pam. Mix crust ingredients
with a fork and press into prepared pie plate.
Bake crust at 350º until golden brown for 10-14
minutes. Cool crust 10-15 minutes before filling.
Serving size: 1/6 of piecrust, 1 point

Nice recipe Candice. I am getting rid of sugar and sweets again. Amazing that I even go back to them when I know I will end up regretting it. Lots of aches and pains this week. Part of it is the change in barometric pressure....nice and sunny one day, then cold and rainy the next. Like today. And the other part is left over Easter Candy. :o

My cough is almost gone. I finally got to sleep laying down last night...slept almost 11 hours...I was exhausted!

Another uncle had a heart attack Thursday night...he's hanging on but in critical condition. I got to thinking...I have 17 more aunts and uncles left! Ages range from 68 to 84...that's a lot of funerals!!!!!!!

Meme- You sure do have a big family.. You seem to be going to a lot of funerals. I hope things change for the better soon.. Personally ,I am no good at those things. I was a nurse in a nursing home for the last 15 years I worked. I saw my share of dying. At the same time family members were expiring too.

Happy-Two Easters!! My hubby is greek orthodox. It is TRADITION. He has been going to the Methodist church with me lately though.. The family expects the TRADITION too. It is the one time of the year I cook lamb..We like it ,I just don't cook it for some reason. Ofcourse we eat very little red meat.

Happy...... I am in my second day of sugar withdrawal. Yesterday was awful...I might make it today just because I went grocery shopping and found some non sugar alternatives (nuts, cheese etc). I hit the sugar when there is nothing else.
I have not gotten on the scale in months. I knew that with low carb and the treadmill I was doing OK. Not great, just OK. Then I got my brother's pictures from the wedding I went to and I look .....fat. Part of it is that I buy clothes that are too big. In one pic I am wearing a red striped shirt and Gloria Vanderbilt fatty jeans. The jeans are so baggy in the leg (but comfy!!) that I look like I weigh 200 lbs. I bought an extra large velour jacket that I could wrap around me twice....but in the picture it looks like I am twice my normal size. Eeeeek. That killed me...put me in a foul mood yesterday.
I envy my relatives who have gained weight but just smile happily in their pictures wearing whatever they feel like wearing. Wish I could do that. Instead...I wear black to the wedding to look thinner....:dizzy:

The Pie was wonderful and so easy to make!

I allow myself one good sweet dessert a week and try to eat low points ones the rest like fruit! (already had 3 pieces of pie!)

I know I could never give up sugar completely so I don't try jsut limit it! Use splenda sometimes too!

Happy I gave up caffine years ago...it caused me terrible headaches!

Meme...Most of that post was a recipe...not yacking!;)

Ally son't you get constipated with all that cheese! I love cheese but I can't poop if I eat it!:p I by stuff way to big to cause I like to be comfy...always looks sloppy though. I jsut got a new dress in a size 10 and it is loose ut the jacket is tight in the bust!

Joanne......did you parents objet to you marring another religion? DH's family thinks his church is the only one, kinda makes me mad!

Candice- My parents didn't care who I married... My hubby's parents cared a lot.. His mother didn't want me and I doubt she would have wanted any one else.. I married in his church and tried to do everything right to keep peace.. It didn't work...One day I just gave up and now I am doing things my way.. They are all gone now and strange as it may seem we are getting along better ,now that they are not here to cause problems.Sadly they lost the respect and love of their G/children because of the way they treated me. It was not a happy time for me.
I find that by doing something pleasant and/or creative ,I can relax for hours on end.

WE HAVE SNOW AGAIN!!!!! It isn't really staying on the ground (a little) but it is snow. 200 miles North of us, they are getting over 8 inches of snow. I sure hope this just goes away. All the snow was almost gone. This snow today is the wet stuff - we usually have the dry snow. At least it isn't freezing - YET!!!

Good site Candice. I can't make that pie or I would probably eat the whole damn thing myself. Not doing so good with the sweets. I want to stop eating sugar, but I can't seem to do it. Anyway, no use in tempting myself.

Joanne - I don't like crafts, but I sure can lose myself in a good book. I love to bake, but that seems to be a BIG no-no.

Ally - I know exactly what you are saying about the cravings for sweets and carbs. Increase your protein and it may help it go away a little.

Meme - Hope you are feeling better today.

Mima - I know you are busy, but I hope you aren't overdoing yourself and making yourself hurt. Sometimes, I swear, we are our own worst enemies:lol:

I have a lousy week lined up - Wednesday to the dentist to get my teeth cleaned. I wish they weren't quite so barbaric! In the afternoon, I have a Drs. appt. On Thursday, have to have a Mammogram and a chiro treatment. The chiro treatment doesn't hurt at all, but I still have to drive to get to it. So, if you think your week is bad, look at mine.

I THINK I'm feeling better...not sure...haven't slowed down enough to find out today! I had to take Ross to school and of course go back and get him at 3. I had 2 mystery shops to do, Avon to deliver and bills to pay. And inbetween all that I had to go to my in-law's and hubby's cousin's houses! I'd love to have a place like his cousin's. They have the most beautiful place...secluded back yard with an inground pool, arbor and screened in patio! They also have a cabin cruiser and a huge motor home. Must be nice to have money! Of course they both worked all their lives and didn't have any children...and both their parents died and left them all their money!

My F-I-L had some places removed from his face and hands last week...had to have stitches on two places on his face...went to get the stitches out today and they told him they were malignant. He will have to have surgery April 30th.

Anne...sorry your weather is so yucky. It was in the 80s here today and supposed to stay that way the rest of the week.

Don't know what happened to yesterday's post! Brad got the dishwasher in and we got up two rooms of curtains.tonight my sister-in-law and my niece are taking me out to eat and Thurs my sil is taking me to a play. I need to relax. Sorry about your weather, Anne. It's going to be 70-80 here. My daughter is leaving her boyfriend and getting her own place. Course Mom has to lend her the money!!!!!!!!!!!!!That's 1000 from her wedding account!!!!I don't need this stress right now but life is what happens while ypu are making other plans. Mima- I envy you losing those pounds!! I guess I am going to have to find a solution for me. I haven't really gained,just bounce back and forth with a couple pounds here and there. My fault I'm sure. Don't you know that when our kids get in a jam(no matter how old they are) we are the ones who have to pull them out of it. Otherwise they don't want us in their business.:lol: :p
Meme- If I were you I would run away from home. You have one thing or another always descending on you..I am glad you are feeling better.

Bad day yesterday-I ran over the cement block in a parking lot and then I backed into a truck when I was being so...... careful. Maybe he backed into me-we were both backing up at the same time.Of course I have a big dent in my bumper and he didn't have a scratch.But then my niece and sisterinlaw took me out to dinner and gave me a certificate for a massage and facial. I'm going to cancel my other appt. and use this. I have to take it easy today-Back and fibro bad. Brad's gone to work and i'm going to a play tomorrow. Good. Hope everyone is good. mima

I woke up at 5:30 this morning and couldn't walk! Guess it is a pinched nerve somewhere in my back. I finally made it through to the dining room. Hubby had gone for a walk before work. I was afraid he would come back and get in his truck and go on to work without coming inside so I called my son...hubby walks down the road right in front of his house. I told him to see if he could catch him before he got back home. So I wound up with my son and my husband both rushing in to see what was wrong with me! They got my crutches out of the car (I don't leave home without them) and I made it back to bed. Hubby stayed home this morning and took Ross to school at 10:45 then went on in to work. I stayed in bed nearly all day. At about 3 pm I turned over and something "moved" in my lower back. It has been getting better ever since then...I'm down to one crutch now and probably wouldn't HAVE to have that but I'm just afraid to try walking without it...scared I'll get half way across the room and it'll hit again!

WHAT NEXT??? At least my life isn't DULL!

I took it much easier yesterday. Poor you Meme!!!I hyope you feel better. really hot yesterday-like july. We went and arranged the dinner after the wedding. nice place-25 people. I'm going to get the centerpieces-simple-I was thinking of a hurricane glass with a candle in the middle surrounded by flowers. Only 4 tables. We\are getting there-I'm going to a play today with my sister-in-law and Brad is bringing chinese home because he has to go to the restaurant and fix something. One of the benefits of his work-free food. I have been eating well since I found out about my cholesterol being 248. Hi all-Bye for now Mima

Mima.. I suggest you stay hame till after the wedding. It will be safe for you to go out then. It sounds like you have interesting planned days lined up.
My sister goes back to N.Y. tomorrow. She is not happy about it but she will be back in September. Her son is getting married and her daughter is having surgery so she has to be there. I saw that it was 94 there yesterday. We are in the 80's here.

All of you are experiencing temps in the 80's and we are having snow again today. This was the worst March on record and now April is following in it's footsteps. It is only 32 above!!!!! At least is is melting as soon as it hits the ground and I guess it is ok, as it will save us from drought. Great moisture, even if it is white:lol:

Meme - I hope you are ok now. I have only had that happen to me once and that was right after back surgery. I went to the store, got out of the car and my legs wouldn't move. Scared me silly. Went back home and thought I could crawl fromt he car to the house, but by that time, the spasm was gone and I could walk. Really took it as I sign I was overdoing it and started to behave myself.

Candice - I would love some hot weather and I agree with Joanne - looking sure won't kill you:lol My brother told me once, when I was ribbing him about looking at woman other than his wife "my great grandpappy told me it was ok to look, as long as you eat at home". That is how men think:lol: You gotta love em!

I am glad that it isn't up in the 80's here. I don't do so well in hot weather. Like it around 75. That is about perfect.

Joanne - Hi . 94, I am sure I would be dead. We rarely have temps that hot, even in the dead of summer. Once in a while it does happen, but most of us don't have air conditioning in our homes. We also lack humidity when it is that hot. Nice you got to visit with your sister.

Mima - Enjoy the play. That is a nice perk, to be able to bring home food - I like that.

What has happened to Ally? Did someone finally start to take up all her time?

No, Happy...I'm still here. I am just having a little flare up. Those migraines and carb cravings I have were the early warning signs. I have had a lot of muscle pain, in fact pulled a groin muscle when I was walking and then the last two days just total fatigue.
But I am better prepared now than I used to be. I just keep walking...to buy into the tiredness means I won't sleep at nite plus I will gain weight and get miserable.
Meme....I always wonder how much you can get done before you will drop. Take it easy. Pace yourself.
It is hot hot hot here til Saturday. Haven't even gotten on the computer at home cause it is too hot in this room...but I figured you guys would think I was up to something if I didn't check in.:p

Happy- It was 94 in N.Y. It was in the 80's here in Florida. 92-94 is not unusual here in the summer. I go walking and am wet when I get home. SNOW!!!

Snow must be depressing Anne. Went to the play -iy was great but they didn't have their air cond. on-very hot-much cooler today. i had to go to the chiro yesterday because my back hurt so much-it's better today. i made an appt. for next week. Brad is starting to work a lot because he's in the air conditioning business. He had 3 service calls last night afeter an 8 hour day. But I'm not going to feel guilty when I take it easy because i hurt myself so easily. Next Sat. we are going to move the stuff out of the condo.He hired someone to help him and I hope I can get my son to help. We are going to rent a truck-it's only 2 rooms of furniture and lots of boxes. I keep bringing home a little at a time. Going to the mall I think. Will be careful. Bye and feel good everyone!!!!mIMA

I'm so ready to feel better!!! I just vacuumed my bathroom tonight and my back started hurting! Plus...I'm still coughing! I have so much I need to be doing. I haven't even started my "spring" cleaning...summer will be here before I know it! I have all my closets to clean out, windows to wash and all the glass stuff above my cabinets to take down and wash - plus my light globes in the dining room. My cabinets need cleaning inside and out. I've been taking muscle relaxants and all I want to do is sleep. Tomorrow I'm going to an all day Women's Conference so I won't be getting any housework done! I need to wash, I need to iron, I need to clean, my dog needs brushing and my aquarium needs cleaning out! I sure hope I feel better next week!!!

Candice...maybe we should get together and "feel bad"! We could console each other!

Anne...still got snow? Your yucky week is over!!! I have to have a mamogram on May 17 then go have a breast exam PLUS go to the Rheumatologist on the 20th (which is my BD!) NOT looking forward to my BD this year!!! :(

Joanne - Sunshine and warm today. I woke up to a Robin singing to me, so I new it was going to be nice. Most of the snow melted today, as it was almost 60 above. Went for a drive in the country today (which isn't far from where I live, and the mountains (which aren't far from where I live) were beautiful. This really is Gods country, big open sky as blue as can be, fresh air - well heck, it just is.

And no, I wasn't doing anything more exciting than a slow walk on a hot day. When I pulled muscles in my knee, I wasn't doing anything too exciting either.
Now I did more exciting things last night when my exboyfriend came over and made me dinner and I will pay for it the rest of the week!!:s:
I had also met friends for lunch and we had Mexican food and a few beers. I knew I shouldn't. I am in a flareup. But, I thought, aw what the heck I deserve it. So Mexican food, beer, then a seafood medly for dinner and another drink and by 2am I was on the toilet in total agony. I think I slept about three hours total last nite.
Nap time today.
Boy do I feel old.:(

I DON'T THINK SO!

The sun was shining all day, I woke to a nice robin singing me a song at 6:00 a.m. - got up, closed the window and went back to sleep until 9:00 a.m.

Had a nice relaxing day, and I really needed it after all the running around I did last week. Feeling pretty good, but seem to have a problem with weight loss. Am following the diet, but I seem to be at a plateau and it won't move. I think it is because I am eating to many carbs. May try to adjust this diet this week and see what happens.

Meme are we REALLY depressing you? I am not depressed:lol:

Sorry we are so depressing..I was thinking the same thing but decided Happy is always Happy!

Had a nice time with the boys too and got some nice things but just not feeling that great...I know it's a real bummer!

Monday is cleaning day............I'll have to leave the door open incase I'm not up for the girl that helps and leave her a note.;)

Happy Birthday Candice!!!!Hope your cake was good. We had a nice relaxing day yesterday-church, dinner, nap, bills -We were getting ready to go to the movies when the pastor and his wife showed up and we were in bathrobes-boy, did I run to get dressed. Never got to the movies. Sat. I packed at the condo. Someone brad does work for gave us his condo at the beach for 2 days after the wedding-on the ocean with a pool and jacuzzi. I think I'm feeling calmer.i think we have the condo rented too. You guys are not depressing-just fun. My back is better-gotta keep it that way. Let's not be sick this week!!!!!Mima
