Default Cranberry Nut Muffins

2 Eggs, beaten
1/2 cup oil
1/2 cup Agave Nectar
1 tsp. Vanilla Extract
1-1/4 cups SGWW Pastry Flour
1/4 cup Oat Flour (I put 1/2 cup oats in my food
processor to make mine)
1-1/2 tsp Baking Powder
1 cup fresh or fresh frozen cranberries
1/2 cup pecans or walnuts, chopped

Preheat oven to 350 degrees F. In a small bowl, combine eggs, oil, Agave Nectar & Vanilla. In a larger bowl combine flours & baking powder. Stir in liquid ingredients until just mixed (Do Not overmix). Add cranberries & nuts & mix to incorporate. Pour batter into an oiled 12 cup muffin tin. Bake for 25 minutes. Remove muffins from pan & cool on a wire rack.

This recipe was taken from the side panel of Bob's Red Mill 100% SGWW Pastry Flour bag. I did change the honey to agave, dried cranberies to fresh frozen ones with no added sugar which I had bought fresh & put in the freezer earlier this year. They keep very well.

Three Bean Salad With Salmon and Feta

1 15 oz can white beans, rinsed and drained
1 15 oz can of black beans, rinsed and drained
1 14.5 oz can of cut green beans, drained
2 6 oz cans of salmon, drained
2 green onions chopped
2 T chopped cilantro
2 T white-wine vinegar
1 t ground cumin
¼ t salt
¼ t ground black pepper
8 Boston Lettuce leaves
4 T crumbled feta cheese
4 2 – ounce wedges of whole grain black bread

In a large bowl, combine all the beans, salmon, onions, cilantro, vinegar, cumin, salt and pepper.
Spoon the mixture into lettuce leaves and sprinkle with feta cheese over the top.
(Optional) Serve the black bread on the side.

This just sounds so delicious to me, but without the bread! And, there is low fat feta at the grocery stores now.

Asian Shrimp Salad

4 oz peeled, precooked shrimp
2 T fat free mayo
(2 T water chestnuts, don’t know if they are legal)
1 green onion, chopped
1 t sesame oil
season salt & pepper to taste
Mix well, and serve on Radicchio lettuce leaves

189 calories


Smoked Salmon and Cream Cheese Rolls

Top each of two Whole Wheat Tortillas with
2 T fat free cream cheese, ¼ c fresh watercress leaves,
2 oz smoked salmon and 2 t of fresh dill; squeeze lemon
juice over top and roll up…..

284 calories
