You need some healthy fats in your diet. Approximately 20-35% of your calories should come from fat, so if you're eating 1800 calories, that's about 40-70 g fat.
Some good sources of healthy fat are nuts (e.g. walnuts, almonds, pecans), avocado, chia seeds, some types of fish (e.g. wild alaskan salmon), and extra virgin olive oil. I always put olive oil on my vegetables, which is an easy way to get more healthy fats and makes the vegetables taste better.
If you want a healthy alternative to ice cream, you should try the famous "banana ice cream" recipe. The recipe: slice 2 bananas, put on a plate and cover in plastic, freeze for at least 2 hours, and blend. If it's not blending well, you can add 1 or 2 tbsp of milk. If you want to make different flavors, you can add things like vanilla extract, cocoa powder, berries, or nut butter. If you want to see the recipe in action, there are a lot of videos on Youtube.
