If you want something more concrete, you could try mypyramid.gov, Weight Watchers Points, or BFL (http://bodyforlife.com/nutrition/mealplan.asp).

An uncomplicated way of cooking is a George Foreman grill. Throw on some steaks/chicken/porkchops, steam some rice, and add a fresh salad and you have a meal.
