lene-These werent in the book I dont think, but here is 2 that look yummy!!

Morning cheesecake phase one

3 packages (8 oz each) neufchatel cheese (1/3 less fat cream cheese)
8 oz fat free cream cheese
1 1/2 cup Splenda
24 oz nonfat cottage cheese
6 eggs
2 tsp vanilla extract
Preheat oven to 400*F.
In a large mixing bowl beat the 4 packages of cream cheese and Splenda until smooth and fluffy. In a blender or food processor combine cottage cheese and eggs and blend until smooth. Add gradually to the cream cheese mixture. Fold in the vanilla extract. Pour into spring form pan or pie pan.
Bake for 10 minutes. Turn the oven down to 200* and bake for an additional 40 minutes. Turn off the oven and allow the cheesecake to stay in the oven until cool.
Makes 16 servings

Broccoli Bake phase one
1 lb. broccoli florets
2 tsp. Smart Balance spread
1/4 cup onions, chopped
1/2 cup celery, chopped
1/4 cup mushrooms, drained and chopped
1/2 cup vegetable stock
1 tsp. Italian herb seasoning
1/2 cup low fat or fat free parmesan cheese
1. Preheat oven to 350?F. Place broccoli in a steamer basket over boiling water. Cover and steam 4-5 minutes or until just tender. Drain and keep warm.
2. Melt butter/spread in a heavy nonstick skillet over medium heat. Saute onions, celery and mushrooms 4-5 minutes or until tender.
3. Stir in stock and seasoning. Add salt and pepper to taste. Simmer another 2 minutes.
4. Stir in broccoli. Transfer mixture to a baking dish sprayed with Pam. Top with Parmesan cheese and bake 15 minutes

You are still on phase one right??

Well ladies I totally went off the deepend last night and I am up 1/2 a pound to show for it, I ate chocolate ice cream and a brownie!!! :eek: I just had to get that off of me, I am so glad my bubby goes back to work Saturday and I have collected what is left of my sanity and got right back on my plan this morning, I hate it when the foods are brought in and put in my face, I do not keep junk in the house when he is working, he really eats very healthy until his vacatoins and then he throws it all out the window, and I usually do too, so this has been one of the hardest weeks for me. He did buy a book written by Sly Stallone and the way he eats is pretty close to phase 2 of the diet I do now so I am just know once he starts it that I will not be tempted nearly as much. He does get one cheatday a week and that is on Sundays, and I usually have no trouble that day unless like now and TOM is running away with my sences :lol: Have a great day ladies!! We can do it!!!

I haven't posted here in a while ladies- sorry about that. I'm doing well so far. Down from my start of the challenge weight, which was 208 pounds, to my current weight of 200.4 pounds. I'm almost out of the two hundreds! yay!

Christian, wtg on getting right back OP this morning! Having a good OP day and sipping on plenty of water, I'm sure you will undo that 1/2 lb. in no time :hug: It sounds like you have had a lot of temptations there this week, that must be hard. You did good in avoiding all those temptations this week thus far. I don't keep any junk in the house either, the house is pretty void of anything not on my plan, except for a few of DH's things and the wheat bread I picked up which is eagerly waiting for me when I start ph1.5 ;). I know I am lucky to be in a position to be able to do that, it helps me a lot because if there is something in the house that I really like or is tempting, I will know its there and I will think about it and obsess about it which makes it much harder for me, especially in the beginning. Needless to say, under the current circumstances....I think your doing pretty darn good! Stay strong and keep up the good work :) Thanks for posting those recipes up there for us, that was very nice of you.

Oh, I watch biggest Loser too! I watched it last night, I just love that show, it is so inspiring.

Hi Jen, congratulations on the weight loss :carrot: Your sooooooo close to onderland, keep up the great work :)


As for me ladies, I feel good because I finally got outdoors and got out for that walk. Dh and I went to the park and walk/hiked for an hour. IT's a good workout because the trails are very diverse and it's just so beautiful there, the time flies. It doesnt feel like exercise. Hmm, then again it does. DH took me up a couple of hills and I had to slow down a few times to catch my breath....he is a good person to walk with, lol :)
TOday , my focus is just being OP and drinking my water. Cooking chicken kabobs on the grill (with orange pepper and onion). I have them marinating in some market basket f.f italian dressing, fresh squeezed lemon, oregano, garlic powder, and pepper. IT's one of my fav. ways to eat chicken, in fact I made plenty so I am having it for dinner both tonight and tomorrow night along with a greek village style salad. (Athenos fat reduced feta is pretty good, I like it much better than el presidente f.f feta....and though both are a far cry from the imported stuff I'm used too at least the athenos brand is closer to what I'm used to).

Greetings! Eating has been on plan. I am really trying very hard to stop sampling the kids food..that's what does me in every time! Working out is OP. I wake up early and get it done though I find now a days...I enjoy the rigorous work outs and the alone time I get by waking up early...

Christian, thanks for the recipes. I have 2 very stressful days ahead of me but hopefully can try that cheesecake one this weekend. I'm not on phase 1 but am several months into South Beach. I do a modified version that fits into my life as a soccer/PTA/and mother of 3 type person. My way of eating is 89% OP and 11% off plan. If I was more strict about South Beach I would have hit my goal months ago. Doing it my way has me 9lbs away from my goal without feeling deprived all the time. Sorry about your oops last night but great job getting back on track today.

Sounds like you're doing super Lekhika. I would love to get my runs in early (but it's too dark lately) it makes me feel good all day.

Well ladies, today is the last day of the ph1 south beach diet. Just love it! We were talking about how the plan keeps your blood sugar levels steady and thus less hungry and less prone to go on a binge and I am experiencing the results which is really neat. I'm not hungry anymore at night after dinner (like I used to be). I think the veggies help a lot with that too.
Ohhh, my dad got me some fresh haddock today, 7 lbs! (he was in the seafood business and knows where to get the good stuff). I'm really happy about this because I knew I would tire of chicken sooner or later and seeing as I don't like any other type of seafood or many meats, (just gr. sirloin)this will surely help!

I had a good OP day, I ended up having the haddock for dinner and not the kabobs. I can have some of those for lunch tomorrow with a salad. As far as the rest of my day, I went to dads cardiologis visit with mom and dad. All went well, we covered a lot of ground. I brought up the fish oil and she said it would absolutelyyyyy be great for my dads heart! So now they will both start taking it, mom too! She also told me to look for the fishoil that comes from small fish, not to get the one from cod as the ones from small fish are best...she said it would be on the label. ok, so the one I picked up (prior to this meeting) did not say it is from cod, it is mercury free also but I don't seeeeeeee anywhere which fish it is from and it does not state "from small fish". I have no idea and because it doesnt state anything I bet it's from Cod. I need to go check all the labels in the store. A jumpstart would be great, does anyone know of a good brand that is from small fish???? Maybe I should post this in the SBD thread too, I have seen a few of the ladies mention fish oil.

Hi everybody,

Sorry I have been so quiet. It has been one of those weeks where I have just been running from one thing to another.

Sadly, I can't report any weight loss this week. I didn't gain when we went away last weekend so I was happy about that but I haven't done a great job at being OP this week and because of the crazy schedule I am missing two days of workouts as well. :shrug:

I am trying to draw inspiration from all of you ladies because you are all doing so well at losing for this challenge but I feel like I am not getting anywhere. :( I guess I just have to take it one day at a time and hope that I can do better today than I did tomorrow.

Hi all, been a very busy day here....popped in for a quick post before I head out.

urockmom, it's nice to meet you. Those weight loss stalls and/or sidetracks are most likely to happen to us during the journey but even though we know this, it sure can be a stinky feeling when it happens...and frustrating. What helps me when I had/have a bad day/week etc. is to try and change my thought process from the negatives to the positives. So instead of thinking about how I messed up (painful, depressing thoughts), I start thinking about where I made some progress and what I did do that was better, albeit how small that positive may or may not be. Honestly, I think that you going away for the weekend and not gaining is really good! That's a big positive that you brought up. Also, even though you may have missed out on 2 workouts this week....I see that you already accomplished the 50 miles for October and we are only a lil over half the month! Great job :) you ARE getting somewhere ;).
I so agree with your one day at a time philosophy, that's always the ticket for me. Just concentrating on today and focusing on making it a good OP day. Hope you have a good one : ) We may not win every battle but as long as we help each other pick up and dust ourselves off and start our plans anew.....in the long run , we will surely win the war! :hug:

urockmom: Love that screen name. I agree with the one step approach. You still have a lot of time to meet your goal! Try not to play the number game. Play the health game instead. The numbers will follow!!! You are doing fantastic! We all would love that magic bean that would just take it away. If that were to happen though, think of all the people here at 3FC that would never be communicating. This place is awesome! You are a part of our journey as we are a part of yours.

I feel that the journey is tough but so worth it. Everything we do becomes a part of our story. I don't regret my story so far but I want to make it more active and healthier so that I can keep on creating it. I have a lot to do with my life and don't want to have it cut short because I didn't take care of myself. That is the key right there....TAKING CARE OF YOURSELF! We (as women) always want to take care of everything and everybody but we often forget to take care of the most important person...OURSELVES!

Wow...did I get deep. :lol: Anyway...have a great weekend everyone and go out this weekend and create a story to remember!

I lost 2 lbs. this past week so I'm happy. I got that darn TOM out of the way too, whew! So glad I got through it okay planwise this month (tom), sometimes it really throws a ratchet into my plan. Hope you all had a great day ladies, talk soon.

Dear Hattie & FullSteam & everyone else too!

Thanks so much for the support. I have been down on myself over the last few days when it didn't appear that I was going to make goal. (& I didn't :() but patience has never been my strongest asset. ;)

I got up early this morning and had a big workout (weights + 45 mins on elliptical) so now I am tired but not defeated. I had set my mini-goal for today because we have a fancy dinner to go to and I wanted to look good in my dress but I think that I am going to look good anyway. No one else but me is going to know that I could have looked 1.5 pounds better than I do. No one else can even see 1.5 pounds! :p

I think this past week has been a case of making progress and then sliding back into old-and bad-habits. I am trying to realize that this is a long-term fix. As you say, I have to eat healthier and exercise for LIFE not just for NOW. And not eating right and getting in my workouts was totally a case of taking care of everyone else, DDs, DH, and parents, instead of me!

So, thanks again to you and everyone on 3FC for helping me on this journey and providing some much needed perspective!

I am still here ;) I was on a little sabatical if you will :lol: Everyone is doing SO well, I have to say that I am really impressed and happy for each of you :hug: I however woke up with a gain this morning and refuse to weigh in until TOM is gone and see how much of it is real, I am heading out this morning to get a look at a clean eating cookbook and I am really glad my hubby is back to work, as I am able to be very strick with my eating again, as well as his. He redid our family room over the weekend and now I have a whole new workout space, with my bike and weight bench and my teadmill will be going in there when he gets home, so there is no excuse for me to not exercise now ;) Well ladies I am off to prepare for the day...

The other day I got a migraine and was pretty much out of it. I didn't eat like I should of. I need to work on when I'm sick to eat the same or somewhat like it. Thankfully, I didn't gain.

Jen- Congrats on the weight loss. :)

urockmom- The one day at a time gets me through this weight loss journey. Even if it's not showing on the scales it may show in inches. I have lost 8 pounds, but my clothes are feeling a lot more different than just 8 pounds. You are doing a great job!!!
