Leftover steak with cilantro lemon-lime brown rice, black beans, corn, lettuce/spinach, caramelized bell peppers and onions, greek yogurt, 1/2 oz cheese and a few tortilla lime chips.
Roasted porkloin (and somehow I manage to make it juicy and moist!!) with bacon and pineapple crust, potatoes/onions/peppers/carrots roasted along side with the pork. Served with mango and peach salsa.
