What do you do with cilantro?

  • What do I NOT do with cilantro? I put it on or in everything: soups, stews, spreads, stir-fries, pasta, pizza, sandwiches...

  • Chop it with a small hot pepper and maybe a small clove of garlic. Put in small jar, cover with white wine vinegar and let it sit in the fridge for a few weeks - strain, and - ta-da !- a great vinegar for making a fresh salsa or drizzling over some sliced avocado! Yum!
  • What do I do with it? Bury it in the compost pile. I'm one of those people who picks up the negative, soapy taste (like Julia Child) while my beau loves it. I won't even let him grow it in the garden cause I know he'll sneak it into things. We buy it for specific recipes he wants to make and then I compost the rest of the bunch!

    I finally experienced the yucky taste when I got carried away and added too much once. luckily I still like it. I'm adding it to quesadillas tomorrow night. Portobella, green onion, cilantro, avocado, salsa and cheese all mixed up and melted in a tortilla. Parsley or spinach would work too.

    The dressing on the salad is Cilantro Avocado dressing and is soooo good! If you have a blender, magic bullet or food processor you can whip it up super easily;

    1/2 of an avocado
    1/2 cup plain non-fat greek yogurt
    2/3 cup packed cilantro leaves
    1 TBS lime juice
    1 clove of garlic, minced
    1/3 tsp sugar (I used stevia)
    1/3 tsp salt
    2 shallots, minced

    And, viola, dressing! Each 2 TBS serving is about 35 calories.
