Default Stumbled on a low cal/carb dinner yesterday...

Just thought I'd share. I'm just now starting to get back into losing weight, and I've been out of town so my fridge was kind of bare. So I made what I could with what I had, with some success!

I had a can of Hormel chicken, added some light mayo, chopped onions, and my favorite Carribbean Jerk spices. Realized I had no bread, so I cut up a big green pepper into 4ths and just scooped the chicken salad into them! I actually really enjoyed it. Anyone ever do this before? I may never use bread or wraps for chicken/tuna salad again!

That sounds really good! I like using bell pepper slices to dip in hummus instead of using pita bread. They are so tasty and versatile!

That really does sound good! I think I have all of that stuff at home so I may try that tonight. I'm getting tired of the whole wheat tortillas.

I have made stuffed peppers before - they were awesome. Thanks for reminding me that I should make them again. I wonder what they would be like with canned tuna...

That sounds good. I've taken the same can of chicken and mixed it with some sugar free vinegrette dressing, chopped jalapenos and black olives =

Okay, I have to ask... is canned chicken good? It kinda scares me so I have never tried it... does it just taste like chicken?

I've wondered this too!! Hormel's canned turkey chili w/no beans is decent...but I'm too afraid to try canned chicken -.-

I think its fine to make chicken salad with! I usually add lite mayo, onions and a baybell cheese. And either horseradish sauce or carribbean jerk spices for a little kick. I wouldn't eat it plain though.

I like canned chicken when I'm mixing the chopped chicken in with something else. Chicken salad, buffalo chicken dip, etc.

I don't think i would like it plain either StoneFree. But then, I don't like canned tuna plain.
