Today I made chicken breast stuffed with laughing cow cheese, spinich, and mushrooms. I also made perogies and salad, but skipped the perogies.

Today, while my family had fast food (my husband, as much as it may not sound like it to most, was helping me out so I didn't have to make dinner for him and the kids), I had my chicken veggie casserole and green beans.

I went to my moms for dinner- yeep!

Their menu:
BBQ meatballs
roasted potatoes
fried okra
homemade bread and butter

I brought with me a big premade package of veggie skewers to share and since i honestly didn't trust anything esle i ate only the grilled skewers with salt, pepper, parmesan cheese

they also had homemade brownies and cookies! luckily i brought along fresh strawberries and fat free redi whip.

i think i made some darn wise choices!!

No recipe really, I just sauteed some mushrooms, cut a slit in chicken breasts, filled them with laughing cow cheese, a sprinkle of parmesan, the mushrooms, and spinach, sprinkled them with a garlic salt and pepper mixture, quickly sauteed them in a nonstick pan coated with olive oil just to brown them, then put in a 375 degree oven until they were done. I do a variation on this with the Queso Fresco and chipotle flavour , I cook it in a nonstick skillet and when it's almost done I top it with fresh salsa and put a lid on. SO good


Last night I turned down takeout when my husband offerd to go get it and had a healthy meal from home instead.

Tonight is my dad's b-day dinner, hope I can keep it together. If all else fails I'll order some kind of chicken and try to get veggies (broccoli hopefully) as a side. And I'll most likely only eat half, depending on how big it is to begin with. No desert, but my family never orders it anyway so it's all good

I'll let you all know how it went...wish me luck! 163.8, trying to get to 159 asap!

Sounds yummy! I also do it with asparagus, lemon zest, and goat cheese. The possibilities are endless.

BIG congrats to all these winning choices!!

As I was preparing dinner I snacked on celery sticks.

After dinner but before bed, I SO wanted 'something'! Looked at the box of breakfast cereal that was tempting me..the calorie count wasn't too terrible, but the carbs are high and usually one bowl with skim milk tastes SO good it just makes me want another.

I took down the cannister of whole oats to contemplate a half cup of oats, but that didn't quite appeal to me. Ended up measuring 1/3 cup of the breakfast cereal (store brand version of Flakes, Nuts and Fruit) and ate that piece by piece with a hot cup of green tea. And I can't believe it satisfied me but it did.

Eating after dinner is something i really need to work on, but last night was the first that I've caved since re-committing to getting smaller and fitter (2 whole weeks, lol)

Tonight was a family members birthday dinner; I was slightly nervous. I ended up having the maple glazed chicken with steamed broccoli in place of rice, 2 glasses of water, and a big salad (dressing on the side i dipped my fork into). I turned down the biscuits, though on the way home I did buy a mini pack of Charleston chews because I've been REALLY craving some chocolate lately, and there's cake at home that I don't want. 13 pieces is 180 calories. I had 2, and put the rest in the freezer, and I still have 400 calories left for the evening. I have no idea how that happened haha.

Anyway, I'm quite pleased with myself!

so tonight my husband walked in with My favorite desert from the Fresh Frozen custard place down the street and said he wanted to split it. I was good and said no thanks and had yogurt with some cherrios and fresh strawberries instead. It was really really hard but I did it. I did however tell him he was evil.

I was laying in bed unable to sleep last night thinking of PIZZA, which lead me to think of pizza all day. Normally I would cure that by fitting pizza into my plan. Well, I am doing this reduced carb experiment this week, so I didn't want to give into this craving. I bought my kids McD for dinner, then headed to my parent's where they were eating guess what?? PIZZA. I ended up having chicken and veggies for dinner. So, I made it through the lower carb, pizza-less day, and was reminded all day of why I just calorie count and eat what I want, because eliminating anything makes me want it more. But I commited to it to one week, so sticking with it-one more day.

I was in my room just now on this forum when my mom calls saying she is craving a hamburger and wants to take me out to a diner. I told her I can't go off of my diet. As much as I'd love to go out to eat right now I know I have already used most of my calories today and I didnt want to ruin a whole day of hard work.
