made diet coke cupcakes! they are actually really good!

  • Ive heard of making a low cal cake out of a boxed cake mix and a can of diet coke! I tried it tonight making cupcakes so I could make sure an portion control and they turned out really good! they are really moist they are much softer then normal cake making it harder to frost but I put one tablspoon of whipped chocolate frosting (45 cals) on it and for a whole cupcake it was 170 cals of delishness and hit that pms spot perfectly! LOL

    I used a pillsbury sugar free devils food cake with a can of diet coke for tonight and put a tablespoon of whipped chocolate frosting on the top- does any one else have any good combos? I was thinking of trying diet root beer with spice cake!
  • Very interesting, I've never heard of making a cake with diet Coke. Is that all there is to it? Mix a boxed cake mix with the soda and bake?

  • yup all it takes is one box of cake mix and one can of diet soda! so simple! it's amazing that it rises like that with out the egg and oils! there must be some in it some how is my guess! but the soda adds no calories to it so you just go by the info on the box! I used a sugar free devils food cake for 120 cals and found a whipped choclate frosting for 90 peer two tablespoon each cupcake only need 1 tablespoon so for 165 cals i had a moist yummy chocolaty cupcake!

    I'm thinking of trying an orange cake with diet orange soda and spice cake with root beer!

  • I've done a cobbler with frozen fruit, a box of yellow cake mix, and a diet sprite poured over the top. It was OK but not something I'd bring to a party or serve to guests. I've also made a Coca-Cola cake before, but it had all the fattening stuff in it, too. I will try this for sure tho!

    You can make a cake with vinegar for leavening instead of eggs for those with egg allergies or vegans.

  • I have made these cakes too, I love the taste but they can be tricky to ice since they are so soft. A topping I use it FF / Sugar free cool whip with a small box of sugar free instant pudding mixed into it. It its pretty good and a low cal treat.
  • Okay this sounds interesting, but I thought i read that aspartame, (aka nutrasweet) was not supposed to be heated over a certain temperature or it turns to formaldehyde...(or something nasty for your health). Is that just an urban legend?

    I've heard something like that but not that exactly. I've heard it's bad to heat aspartame for some reason but I can't remember why.
