I could really use some ideas and I'm hoping you CCs can help me! I took a job out-of-state for four weeks and I'm living in a hotel room for the duration of my job. I don't have any space to cook, or any equipment like a hot plate for that matter, but I do have a microwave and a mini-fridge.
I need some ideas for somewhat healthy (I know the sodium content may get me) lunch ideas that I don't have to prepare before work. So far I've been doing the Kraft Mac & Cheese cups, 80-calorie tuna cups, cans of Progresso Light (sheesh those are heavy!), string cheese, mini V8 cans and I am clear out of ideas.
Is there anything (other than sandwhiches b/c I am sandwiched-out) you guys recommend??
The sodium is up but I like the lean cuisine and weight watcher frozen meals.
I also like Del Monte Healthy Selection meals (not frozen). You can always do salads with the oscar meyer ready made chicken for some protein content, etc.

I would run the market and grab 3 bags of different types of salad. then grab a marinaide, not a salad dresseing. FAR less calories, and they taste great, I love Kens and Lipton. Or maybe oatmeal.
I buy those packaged lettuce bags and use half a day. Take the toppings seperately and put it all together at work, toss it all in a large tupperware, shake it up and boom ready salad
You can combine the progresso soups with the string cheese and microwave it yummmmm!
I also take fruit- oranges, apples, pears, etc. Fruit is a great filler.

Ohhh I love the idea of melting some LF cheese into my Progresso Light soup and the rotisserie chicken is a great idea, too! And buying bags of salad and leaving them at work is a wonderful b/c it means I can go straight from Safeway to work and place it in the refrigerator there. I love not having to shlep anything. Now if only I could find some Greek yogurt (this 4-week assignment has me somewhere pretty remote)...
