If you have a microwave you can pack leftovers. Sometimes I'll make a crockpot of chili or soup and eat on that for the next week. I also get the morningstar burgers and eat that on a slice of bread. Sometimes I'll boil some eggs and make egg salad and eat that w/crackers. I eat sandwiches and wraps quite a bit too.

I make a lot of wraps for lunches. Some cold cuts (lean turkey or ham) rolled in a fat free or whole wheat tortilla with bell peppers, romaine, mushrooms, tomatoes and a little light ranch. I also like low fat yogurt, fiber one bars, string cheese and fat free microwave popcorn.

I love ceasar salads with light dressing, real bacon bits, and leftover meat (chicken or steak) if we have any.. Yum!!

I just bought a good recipe book for me.... I am not a gourmet chef, nor am I creative. However, this book "Hungry Girl 200 meals for under 200 calories" (or something like that) has a lot of easy prep ideas. Like I never would have thought to put SF FF hot chocolate in quick oats (with a banana if you wish) to make a "chunky monkey oatmeal". There are a lot of wrap ideas in there too.

I have some chicken breasts that I bought this week so I'll be throwing those in the crock pot tonight with some tomatoes, cilantro and some taco seasoning and it will be perfect for tacos during the week and to go on top of a salad. Sometimes I do shredded chicken in the crockpot with bbq sauce and it's great on sandwiches, by itself, with rice, etc.
Often times I take a frozen dinner to eat at work but I have access to a microwave so I bring leftovers or something like the above things that I mentioned.

Okay so yeah I am so going to do that on wednesday. I can get to the grocery store tomorrow and buy some cilantro, and we have TONS of chicken breasts thanks to sams club. That sounds so good and easy and I love taco flavored chicken in everything from wraps to salads, never thought of using the crock pot to do it but now with it being in the low hundreds already its time to start using the crock pot and george foreman less than the oven.
