I will be visiting my brother and his pregnant wife, so whatever the "mommie" wants to eat...
it will probably include deviled eggs and fried chicken
I will be having a big green salad!!
1/2 package low-fat cream cheese (more if you like it more cheesecake-y tasting)
2 tablespoons sugar (I often use Splenda
a little low-fat milk
2 cups Cool Whip lite, thawed
1 teaspoon vanilla extract
In a mixing bowl, mix the cream cheese & sugar until well blended and smooth. Gently add in the frozen whipped topping and vanilla. Add a tiny bit of milk at a time until the dip is the texture you want. Serve chilled.
I often sprinkle it with mini chocolate chips or peanut butter chips before serving, but this is not necessary.
This is good with fruit, chunks of angel food cake, vanilla wafers, graham crackers, etc.
-Low-Fat Schnieders Ham w/ pure honey
-steamed broc/cauliflower
-Scalloped potatoes made with diced red pepper, yukon gold potatoes, yams, light mozza and cheddar, milk, caramalized onion and cayenne pepper
-mini strawberry and rhubard pie for desert!
Since it will only be myself and my youngest son (18 years old), I am roasting a turkey breast. I will bake a sweet potato for me and 2 white potatoes for him. For the veggies I am making brussel sprouts for myself (I will bake them along with my sweet potato and he is having baby carrots.....also roasted.
To finish dinner off we will have a cup of tea and pop in a new dvd.

We eat at two different homes and I am at the mercy of whatever they decide to prepare. So I made 3-bean salad minus the oil and am taking it to both places. That will be 90% of my meal. If I decide to splurge on anything else, I will just wait until my daughter is done and take a small bite of what I want, just for the taste. It has worked for me at other holidays...
