You guys are inspiring me. I think I'll bake a loaf of my very delicious chocolate zucchini bread with chocolate chips in it. Best diet cake ever.

Default I like to cook now that I am calorie counting

I like to cook, but baking is another story

I usually cook dinners for the week on sat or sun and then to have time to bake on top of that is hard.

Last night I made some sort of carmel creme thing that is totally yucky...my first attempt and it stunk...

One for every 5 lbs. lost

My cupcakes came out perfect, here's the recipe:

Jenn’s White Chocolate-chocolate cupcakes:

3/4 cup whole wheat flour
1/2 cup unsweetened cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sugar
1/2 cup maltitol syrup
1/2 cup canned 100% pumpkin
1/2 cup Egg Beaters
1/2 cup Breakstone fat free sour cream
1 teaspoon vanilla extract
2 or 3 TBSP warm water
60g White chocolate chips

Yields 12 cupcakes
12 servings

Preheat the oven to 350F; line cupcake pan with 12 liners
Mix dry ingredients; add wet ingredients; add warm water as need to thin batter; add chips
Fill cupcake liners evenly; bake on 350F for 20-25 minutes or until done

Jenn, have you figured out the calorie profile of those? They look good.

Hi Stacy! I decorate cakes too as a hobby. I'm still sorting out what to do with the cakes afterwards. Usually I have one piece, one to DH, and bring the rest in to work - it's usually demolished within the hour. Last week someone asked me how much I charge per slice for wedding showers. (Does anyone know the going rate???)

I'll post a picture or two of mine when I get home. What kind of decorating do you do? Is the one in the picture fondant?

Cheers!
