Littlered here's the Sweet Potato Tacos recipe:

Quote:
Saute shredded sweet potatoes, onions and minced garlic in olive oil until soft. You may need to add a little water if the pan gets too dry before veggies soften. Salt to taste, add a little cheese of choice and serve on a warm tortilla (I used WW). I warm the tortilla in a skillet until it gets a little crispy. This makes a huge difference imo in how good a store bought tortilla tastes. You can also add beans (I like black beans) before you add the cheese. I love eating the sweet potato mixture sans tortilla.

coolmom - that sweet potato taco recipe looks yummy. I've had potato tacos before that are really tasty.

meg - I like celebrity fit club too, but I didn't like that they only focused on the screech drama this last season. I'd rather see the other stuff. They are both inspirational shows. Makes me want to exercise.

abigi - Welcome. I had that same problem with WW and JC. I wanted to join but couldn't afford to. It's okay. Calorie counting is working, and it's only cost is food.

I'm going to a family birthday party today. The only thing I'm a little weary about is that I come from a family who LOVES food (which is why I ended up this weight) and I know if I don't eat enough they're going to think that I don't like their food. And when I say I don't want rice they're going to look at me like I'm absolutely insane. haha. Gotta love family. I do have extra calories saved for dinner. So I can have a larger dinner than normal, but not LARGE. My idea of large has changed. I'll have to get in some today before we go.

Have a great day Ladies!

Hey all!!! Wow, Saturday is almost gone already, what happened to the day? Oh that's right, I stayed in bed until 11 today! LOL

Edzard- Congratulations on the 5lb loss!!!

CoolMom- Keep it Lady! You're doing great!

CraftyMommy- Your family sounds like my DF's aunt! She forces us to eat when we go there, and if you don't she takes it personal!!! DF told me that Filipinos are that way. LOL! Well his parents are more laid back, I usually bring my own brown rice or food if I need to. Good Luck to you!

Abigi- Welcome Back!! Good Luck to you!

Petra- Have a great time!!!!

Charlene- DF told me to not get anything but an Ipod, and not it's generic version. He said you can get a refurbished one for about 49.00. I remember when we had 99 cent theaters too, but that's when I lived in Albuquerque.

LittleRed- I loved the jokes! Aren't meals fun at the retirement home? Sometimes they act like kids! I work with the population that don't have the greatest memory, so when they have their meals one gets something, and the other who ordered the second option wants what the other resident has. LOL that was a mouthful. Just be careful though, alot of the meals at retirement are sometimes high in calories, since older folks don't eat as much as we do.

I want to see Knocked Up too! It looks funny! I want to see it because it has the girl from Grey's Anatomy!!

Well gonna have a light work out before bed. We have our 3.1 mile walk tomorrow. I hope it doesn't rain!!! That would be bad! Well good night everyone!! Keep up the great work!!

I managed to keep my daily calories below 1400, even after a slice of pizza and a maragrita tonight. I was also able to drink over 80 ounces of water. And for exercise today I took the kids for a bike ride (the last time I rode a bike was about 15 years ago, its true that you never forget how to ride a bike). I hope I am able to do this good tomorrow!

back Kate!

Fiber~ 27 grams

We had friends over tonight for dinner. It was a Pinot-fest (they brought the wine~4 bottles although we only opened 2.) I made healthy food, but the wine and dessert put be over. Oh well, that's still under what I hope to maintain at, so I won't worry too much. I may try to go a bit lower tomorrow to compensate. Time to clean the kitchen up, I'll try to catch up on posts in the next few days.

Calories for Saturday
1614
fiber: 35
12 glasses of water

I was supposed to have yesterday off… I didn’t. there is a bug going around here. And So far I have been lucky!

Saturday is the day my son and his family spend here with us. I cook something and we spend the day together.
They did spend part of the day here.
I made Sloppy Joes, Baked Beans, a salad, CHIPS! And fruit for dessert.
All in all. I did ok.

my weight is back down to 160.8

I am not changing the ticker for a while. till my weight stays in a place longer.

Tinky,
You are sooo right about the patients. Forgetting what They ordered for dinner.
Happens at least once every few days.
Most of mine take what ever we give them, like it’s the best food in the world.

I don’t eat there at all. Except the once…the cheese cake.

Zoe,
thanks for the recipe. I will try that one later this week. Have you ever added the seasoning for taco’s to it.
When you fry the tortilla crisp… doesn’t it break when you fold the food into it?

Kate, abigi7

Theresa..I don't know about the taco seasoning. This is a entirely different taste, very sweet. And the tortillas are just warmed up in the pan so they should still be soft.

Hey all!! We had a nice walk, it looks like the weather was quite cooperative. Now it's all rainy and crappy out! LOL The 3.1 mile was very nice. I walked and jogged it. I felt so accomplished after I crossed the finish line. It gave me a goal to run it next year. LOL!

Zenor- Mmmm Pinot! I love Pinot Noir and the white too.

LittleRed- The only thing I do eat is the soup and salad. That's really about it. LOL. We don't have too bad of food, but sometimes I do wonder about it! LOL

Well DF and I had Chinese food, LOL after I vowed not to have it for a while, but I was craving it and thought I deserved it. So I had it and it was yummy. Though tonight I'm feeling the need for some cereal. Just something about cereal at night sounds so good! LOL! Well talk to you all later!

I went and saw Knocked Up today. It was hilarious! I give it 4.5 stars, because it was kind of risk-a. (I don't know how to spell it, so I spelled it like it sounds. ) It was a really good movie! I d it!

I got it 64 oz. of water today! YAY! I haven't gotten in that much all week. Phew!

We went to Outback tonight, and I stayed healthy, pretty much. I switched to the daily plate because FitDay just wasn't working for me.

Tinky ~ I decided not to get one anyway, because I heard the same thing from my friends too.

cablgurl ~ As sad as it may sound, I cannot ride a bike.

I'm gonna go, I'm exhausted from running errands all day! Bye!

Fiber~ 28 grams

Averages for the week:
1509 calories
30% fat
1415mg of sodium
37 grams of fiber

I'm tired! A friend came over today and we made/canned zucchini pickles. Yum! No eating them for at least a week though. Plus, since they are sweet I will need to limit them. They are fabulous on sandwiches.

I'll try and catch up on posts tomorrow. I hope everyone had a great weekend!

littlered: if you find one of those BMI calculators (you can even edit your ticker to reflect BMI numbers or just google BMI calculator..and a BMI of 30+ is obese, a BMI 25-29.9= overweight, 20-24.9= healthy weight, etc

Charlene, I too LOVED Knocked UP! Thought it was hilarious, and although a bit crude it will make you LOL..

I was a little over on my calories today (less than 100) so I should go work out...
Bascially the cool whip did it, I had 2 c of strawberries (1c x2) and a schwack of cool whip on each ..and my sodium was over for today too bc I decided since today was so gloomy I needed to get out of the house at supper, so we went to wendys and I got a chili, good source of fiber but also sodium- yikes!!

Good morning everyone! I am so excited to report a 7 lb loss over all!!! Woot woot, just a few days ago I was happy to be down 5 and then the scale suprised me this morning. I actually got on and off 3 times to make sure there wasn't something wrong with my scale lol. Hope everyone is doing good.

Hopefully this week goes as well as last, its gonna be an odd one because my hubby is on call and works from home 3rd shift so he starts at 11pm and works til 7am. Then on Friday we leave to go camping, no computer, no journal to log what I eat!! Yikes and it used to be camping was an excuse to junk food fest it, so......my plan is to write down everything I do eat to log when I get home and maybe try to find the calorie counter book I had years ago so I can estimate some of what I eat. If anyone has any other stratageys let me know, part of the reason its gonna be harder is because I will cook the same for everyone since cooking is harder and we usually eat chili, hotdogs, chips stuff like that. Well have a great week and check in with you later!

When I go camping, I like to bring food that I can cook on the grill along with everything else - like Boca burgers, soy dogs or turkey dogs, veggies to grill (zucchini, summer squash, tomato/mushroom/pepper kabobs), etc. And I tend to plan a few meals in advance, so that I know roughly where I'll be in terms of calories, and so that some of the logging/calculating is already done and I don't have to do as much during the trip or once I get back.

Have fun!
