I used baking powder instead of soda. Would that have made a big difference?
Also, do we need to add it at all or can it grow without it?
And OMG, I made the chocolate version and definitely amazing! I cannot believe how good this recipe is! I thought everyone was exagerrating but nope! Haha, never thought I'd be eating a coffee and muffin for breakfast :P
Definitely excited to keep trying and improving the recipe since it did not come out perfect- may add dark chocolate chips next time! Also, cannot wait to try a feta and spinach version on this !

The recipe does call for baking power. Using soda would have made a difference. Yes, it is all needed as a leavening agent.

Left out the cinnamon. Added 1/2 tsp minced onion flakes, 1 T of FF shredded cheddar cheese, and 2 T of turkey sausage crumbles. Yummy. Next time would add more onion and cheese as the taste was a little lost. Great breakfast muffins.

I make this and sub the oil with nonfat plain yogurt, love this stuff!! Instead of putting into the microwave I put it in my waffle iron. Top with sf syrup or fruit and a bit more yogurt. yummy!

I make mine with 1/2 tsp of coconut oil instead of margarine. So healthy and adds a hint of coconutty-ness. I have also subbed Fage 0% yogurt or even a teaspoon of canned pumpkin for the margarine and they all worked just fine. I use pumpkin pie spice. Also I sub egg beaters for the eggs: less calories and less "eggy" flavor in the resulting muffin.

I serve mine topped with two tablespoons of light sour cream, a sprinkle of granular Splenda & a sprinkle of pumpkin pie spice. Sooooo good!
