Default Vegetable Pancakes

3 c shredded vegetable (I used zucchini the first time)
2 eggs
1/2 c garbanzo flour
1/3 c ww sugar free pancake mix (I use Bob's Red Mill)
1/4 t baking soda
seasonings - fresh herbs, onion powder, garlic powder, dill, etc to taste

Mix everything up and cook like regular pancakes. These are the best veggie pancakes I've made yet - light and fluffy and filling. I ate mine with salsa but they would be great with laughing cow cheese, light herb cream cheese, etc.

I'm going to experiment with this one more but I think any quick cooking veggie would be great in this - or anything that will cook quickly when shredded - cabbage, carrots, summer squash, onions, finely chopped greens.......

Depending on your appetite makes 2-3 servings. I made half a recipe and couldn't eat the whole thing.

This recipe sounds great, thanks for posting it. I've never heard of garbanzo flour, will look for it at Whole Foods. Did you use a little olive oil or something to fry them? Thanks!

Just spray oil - organic canola.
