This is the lemon pudding I was looking for! Yippie, I am happy. Now, I can make it and put in the fridge. I love lemon and this tasted so, so good! Monday morning here we come again....:-)

Can this be made without the ginger? It sounds great but I strongly dislike ginger...

Just made this for the first time today. It was delicious!
I think next time I would dissolve the gelatin in hot water (maybe 1/4-1/2 cup) and then stir it in. When I heated the yogurt today it must have been too hot since I ended up with a few solid chunks of cooked yogurt.

Made this again today, this time I used lime SF jello. It is a bit like Key Lime Pie.

Heated 1/2 cup of water to dissolve the jello powder and then mixed it in. Seemed to work much better: no cooked chunks of yogurt!
