Default Egg Muffins

Serves: 12
WW Points: 1

Ingredients:
2 whole eggs
8 whole egg whites
3 tablespoons 1% low-fat milk
5 ounces frozen spinach — thawed and drained
4 ounces ham — chopped
1 ounce cherry tomatoes — halved
1/2 cup reduced fat cheddar cheese — shredded
salt and pepper
ICBINB spray

Instructions:
Preheat oven to 350F. Whisk together eggs, egg whites, milk, and salt and pepper. Add remaining ingredients and stir well.

Spray a nonstick muffin tin with ICBINB spray in each muffin mold. Ladle egg mixture in 12 muffin molds, so that they are approximately 3/4 full.

Bake for 30 mins. Remove from the tins carefully! Makes 12 muffins at 1 pt each.

Nutritional Analysis:
Per Serving: 54 Calories; 2g Fat (38.3% calories from fat); 7g Protein; 1g Carbohydrate; trace Dietary Fiber; 42mg Cholesterol; 212mg Sodium. Exchanges: 1 Lean Meat; 0 Vegetable; 0 Non-Fat Milk; 0 Fat.

Default 1 Minute Breakfast

No time to cook breakfast and clean up? Here is a quick breakfast, I take the fixings to work and can make it there too . . . .

Put 1/2 WW bagel or WW English Muffin in toaster. Whip one egg in a styrofoam cup and microwave about 30 seconds until cooked. Put cooked egg on tasted bagel/muffin, top with a slice of low fat cheese and microwave 10 seconds to melt the cheese.

Points: 4 if you use a Bagel; 3.5 if you use an English muffin

You can also use a slice of Canadian Bacon and add one point for it.

1/2 c. egg beaters (1 pt)
1/4 c. sargento low fat mexican blend cheese (2 pts)
1 T real bacon bits (1 pt)

I was craving bacon and this was a great substitution!! I am still full a few hours later. Yay for protine!!

Default My new favorite breakfast scramble!

Hi everyone,
I have been eating this breakfast RELIGIOUSLY for the last few weeks, it keeps me so satisfied...and its easy! 3 pts.

I scramble three egg whites with one triangle of laughing cow light in butter spray. Then I add in one crumbled fake sausage patty (boca, morningstar, etc.). I top with salsa (trader joe's salsa especial) and go! Its sooooo delicious. The lc cheese melts down really well in the eggs.

If I have time I saute some mushrooms and spinach and add those in too. Yum!

Lightbulb The Best Breakfast Burrito!

Ok so I was looking for something fast and easy to make that would taste yummy and I came up with this.

Pam Spray
96% Fat Free Whole Wheat Tortillas
1 Wedge Laughing Cow Cheese
1/4 cup Egg Beaters
1 Egg
1/4 cup Salsa
1 cup raw spinach
1 large mushroom chopped
Salt and Pepper to taste

Ok you take the pam spary and cook the mushroom untill it's soft, then scramble the egg and egg beaters. Then add the laughing cow cheese wedge cut in pieces and the raw spinach. Put mixture in warm tortilla and top with Salsa and salt and pepper to taste. VERY YUMMY and filling.

Calories 318
Fat 8.84
Fiber 4.2

I think it was like 7 points.

I had mine for dinner and only took like 10 mins to cook.
