Brown Rice Pudding w/Agave Syrup
I love this as an alternative to oatmeal for breakfast! Not sure which diets it would work for; nutrition info is after the recipe.
Brown Rice Pudding w/Agave Syrup
2 servings
1/2 cup cooked brown rice
2/3 cup milk
1 T. agave syrup
1/4 tsp. vanilla extract
2 T. raisins
Combine rice, milk and agave syrup in a medium saucepan. Turn heat to medium and bring mixture to a boil, then lower the heat to a simmer and stir in the vanilla and raisins, if using. Cook until most of the milk is absorbed and pudding looks very creamy (about 15-20 minutes). Divide rice pudding into individual serving dishes and serve warm. If desired, sprinkle with ground cinnamon before serving.
