Oh my these are so good!! I wish I could post a picture. I found the recipe online searching for ways to fry Zucchini.. I thought these were very good.. I will be fixing them again... Yummy... I thought I would share my find with you... Im not sure on the carb count but I thought it cant be much..

This is how to fix them, you will need :
Zucchini
2 eggs for egg wash
mix Parmesan Cheese, Paprika, salt, pepper, garlic powder in a separate bowl

Cut Zucchini like long French fries, dip fries into egg wash, coat with parmesan cheese mixture and deep fry till golden brown..

I've made it exactly the way you did except I baked them at 450-500 degrees for 10-15 minutes. Awesome. I'd do it your way except I suck at deep frying and typically end up with either underdone and/or totally soaked in grease.

I've used chili powder in place of paprika on occasion when I was in the mood for something with a kick.

Amandie, I will have to try baked sometime, sounds easier and less messy.. the chili power sounds great, I will try that...
