Dinner - "stew" i made with collard greens, curry powder, chopped tomatoes and steak tips. (8)

I found some pumpkin seeds that are 4 carbs and 280 cals per serving. I am going to keep them at my desk for emergencies.

readyfreddy 03-18-2011 06:14 PM

bfast - sausage and egg (2 carbs)

snack - cheese (2 oz) (2 carbs)

Lunch - salami and cheese (1), 2 cups broccoli (8)

Dinner - TBD

abluvion 03-18-2011 10:31 PM

I HAVE to get back on track tomorrow. I feel awful and bloated and disgusting after my recent sugar binges.......

B: eggs and bacon, coffee w cream
L: salad, roasted chicken, creamy caesar dressing
S: almonds
D: pork chops with dijon cream sauce, zucchini casserole

Fizziecat 03-19-2011 09:07 AM

The dijon cream sauce sounds good. Mind sharing the recipe or where I can find it?

Thanks!

abluvion 03-21-2011 10:01 AM

It's not really a recipe, it's just me going "hmm, what can I put on top of this pork chop?" :) All I do is dump some dijon mustard in a little microwavable dish (maybe 1 tbsp for 2 people), then dump some cream on top (an ounce?). Microwave for 20-30 sec until warm, whisk to combine, and serve! It is very tasty :) You can adjust the mustard to cream ratio to suit your tastes.

My first day on atkins. Not to thrilled with how I did with everything else but did great with the carbs!
Breakfast: 3 eggs with cheese and 2 slices of bacon (scrambled) (4) total
coffee and water

Lunch: 2 cans of tuna with cheese pickles and mayo (tuna salad) (0) total
half a glass of diet pepsi which is really good for me and water

dinner: egg salad with mayo (4)total
green beans with butter (9) total < 3 servings

all together my totals where 1720 calories 113.5 fat 17 carbs and 111 protein

I am so used to counting calories and keeping track of everything that is just what I am going to do this time. I am not to thrilled with the amount of fat I think I could lower that some and still be doing good with staying under 20 carbs. I am trying to get out of the mind set that I need to worry so much about fat though and just concentrate on the carbs for now. This was kind of a weird day for meals because I don't go shopping until tomorrow so it was a lot of eggs today. Tomorrow will have more meat and veggies lol. and currently I am fighting a crazy sugar craving so I am going to bed to end it :P

readyfreddy 03-28-2011 05:00 PM

Sorry - was on vacation!

bfast - string cheese (1), coffee with cream (1) and 1/2 packet sl (.5) and salami (2)

lunch - brussel spouts (10), nitrate free sausage (1), and artichoke dip (1)

readyfreddy 03-30-2011 05:20 PM

Bfast -

coffee with cream and s and l (2)

snack - brussel sprouts with nitrate free sausage (11)

snack - nf sausage (1), artichoke dip (2), cheese (1)

zetaphine 03-31-2011 12:18 PM

My first day & first post. This is a great place to start.

3/31/11
Breakfast:
3 eggs
1/4 c goat cheese
1/4 c red peppers

Lunch:
3 oz steak strips
3 oz salad mix
2 TBSP blue cheese dressing
1 TBSP bacon
1/4 c mushrooms

Afternoon snack:
1 Babybel cheese triangle

Dinner:
6 oz chicken breast
3 oz pot roast

I'm trying to stay under 20 grams of carbs daily. After writing my meal plan yesterday, I realized that I'd reach my carb limit by lunch, thus my "meat only" dinner. Tomorrow I'll know better.

readyfreddy 03-31-2011 12:56 PM

Hey Zeta - are you following atkins induction? I see some no nos like goat cheese (no soft cheeses) and the red bells. No worries if you know that and are just doing it your way - I thought I'd mention!

me:

bfast - coffee with cream and half pack s and l (2)

lunch - going out with co workers going to do a salad with ranch and chicken (10)

dinner - broccoli (4) and flank steak and hummus (4)

total 20

zetaphine 03-31-2011 02:14 PM

Freddy,

I am trying to follow Induction. I have not read the book in years and must have forgotten all about the limit on soft cheeses and red bell peppers. Thanks for the heads-up. I guess I should head to the library.

drinkypants 04-01-2011 01:41 AM

I just bought the "New Atkins for a New You" book tonight (it's the 2010 version of Atkins), and in it's induction it says you can have the red peppers, and goat cheese. I guess it just depends on what version you are doing.

I am starting induction tomorrow, and am going to stalk this thread for food idea's hehe

readyfreddy 04-01-2011 01:48 AM

Huh maybe I am wrong!! Sorry! I'm gonna check my book ;)

Linsy 04-01-2011 01:54 AM

I believe the older books don't introduce soft cheeses until phase 2. A lot of people prefer following the old books because they are a "purer" form of Atkins (the books that Dr. Atkins wrote himself before he passed away).

zetaphine 04-01-2011 09:03 AM

Good to hear I can have soft cheeses. That means the ones in my fridge won't go to waste. Here's what's on my menu for today:

Breakfast:
3 eggs
1/4 goat cheese
1/4 red peppers
3 oz chicken
3 cups coffee with Splenda (was going to use Truvia till I looked at the carb count. Outrageous!)

Lunch:
1 oz smoked gouda
3 oz fajita chicken
3 oz salad mix
1 TBSP bacon
2 TBSP blue cheese dressing
1/4 chopped walnuts (I know I'm not supposed to have them during Induction.)

Afternoon snack:
2 Babybel triangles

Dinner:
4 slices pizza without crust (chicken, veggies & cheese only)

startanew 04-01-2011 10:18 AM

Friday is kind of my "splurge" day. I don't normally eat cheese except on Fridays, and sometimes I may go over 20 carbs on my splurge day. It seems to work for me. :)
Breakfast: 3 egg omelet w/ cheese, 3 pieces bacon(couldn't finish this,lol)
Lunch:Burger w/ mushrooms
Dinner: Thinking of making a low carb pizza and salad, and maybe some wings.. YUM

readyfreddy 04-01-2011 12:26 PM

bfast - coffee with cream and 1/2 packet (2), string cheese (1)

lunch - greek yogurt (6) broccoli (4)

dinner - scallops and mixed veggies (6)

Total - 19

Linsy 04-02-2011 03:25 PM

Went way over my carbs today. I'm making a plan for tomorrow that I need to stick to.

breakfast: scrambled eggs (2)
lunch: chicken and veggie stir-fry (7)
dinner: chicken, mushrooms, and alfredo sauce w/ a salad (9)
total: 18

drinkypants 04-03-2011 12:47 AM

I'm going to join in, hopefully you all don't mind :) This is day 2 of my induction. I weigh all of my vegetables, because I am sooo paranoid about going over 20grams of carbs lol

breakfast - Omelet w/ 2 eggs, 1oz cheese, turkey bacon, red&green peppers, onion + 1tb butter (5g) I haven't cooked with butter in forever, so this was heavenly hehe
lunch - 2 deviled eggs + Spinach (4.2g)
Snack - 2oz cheese + 10 green olives (1)
Dinner - 4oz chicken + Salad + 6 grape tomatoes + 1oz cheese + 2tb dressing (7.5)
2 pieces of sugar free gum (2)
Carb Total = 19.7

(P.S. I mentioned it up there, but I am doing the 2010 version.. so the items might be different than what you're allowed if you're doing an older version.)

startanew 04-04-2011 08:53 AM

Here's mine today...
B-2 fried eggs(1.2)
L-turkey burger w/ mayo and cauliflower& cheese sauce(5)
Snack-1 cup almond milk(1)
D-TBD probably some kind of meat w/ spinach and mushrooms

zetaphine 04-04-2011 09:34 AM

Rocki 04-04-2011 04:05 PM

I need to get back on track so freaking bad.. I have a scrapbook event this weekend and I would like to get on track before then.

Linsy 04-04-2011 10:09 PM

breakfast: cheese (1)
lunch: veggies with alfredo sauce (7)
dinner: taco salad (10)

Rocki 04-05-2011 11:15 AM

Sorry I posted that other comment in here..supposed to be for the main April thread. Here's my breakfast today.

2 eggs fried with PAM spray and sprinkled shredded cheese on top
4 slices bacon
1 One Minute Muffin
Coffee with cream and splenda

I think the cheese is 1, bacon is 0, OMM is 1 and cream/splenda is 2.. Probably not exact, but close on my carb count.

zetaphine 04-05-2011 12:23 PM

I really went over my caloric goal yesterday. Ended up having 2090 calories (about 590 too many) but only had 20 grams of carbs. Whew! For some reason, I was really hungry during dinner.

Here's my plan for today:

Breakfast:
Atkins Bar (I'm sooooo sick of eggs) - 2g
Coffee with 3/4 tsp Truvia - 3g
2 TBSP heavy whipping cream with my coffee - 0g

Mid-morining snack:
1.3 oz smoked gouda - 3g

Lunch:
6 oz baked turkey breast - 0
20 sugar snap peas - 5g
1 c. green beans - 10g

Afternoon snack:
1 Babybel triangle - 1g

Dinner:
4 oz ground beef - 0g
1 oz cheddar cheese - 0g
Salad mix -4g
2 TBSP Ranch dressing - 2g
1/4 c mushrooms - 1g
1 TBSP bacon - 0g

Totals: 1270 cals & 31 g carbs

I know I'm going over my goal of 20 g of carbs, but I had some green beans to finish before they went bad. I've got to get out of the habit of feeling guilty about throwing food away.

readyfreddy 04-05-2011 01:14 PM

coffee and cheese and salami - bfast

lunch - greek yogurt

snack - broccoli

dinner - crabmeat stuffed sole (thank you trader joes) and veggies

zetaphine 04-06-2011 11:11 AM

I hope it's okay to ask a quick question here. I've been reading about "net carbs" and wonder if that's how I should be calculating my carb counts. I've started taking 1 tsp of sugar-free Metamucil and wonder if I should count it as 5 grams or 2 grams (5 minus 3 grams of fiber.) Any thoughts?

Here's my plan for today:

Breakfast:
3 eggs (1g)
1/4 cheese crumbles (1g)
Heavy cream with coffee (1g)
2 oz sausage (0g)
1 TBSP butter (0g)

Mid a.m. snack:
1.3 oz smoked gouda (1g)

Lunch:
Salad mix (4g)
Steak strips (0g)
Blue cheese crumbles (1g)
Blue cheese dressing (1g)

Afternoon Snack:
1 Laughing Cow cheese triangle (1g)

Dinner:
4 oz corned beef (.5g)
3 oz Salad mix (4g)
2 TBSP Caesar dressing (1g)
1/4 c Mushrooms (1g)

drinkypants 04-06-2011 01:22 PM

About net carbs, it depends on which book you are following. In the book I have (2010 version), it says count net carbs, and I believe in the 2002 version it says to as well, but I am not positive. If you go by the 72' or 92' book I believe it is total carbs.

readyfreddy 04-06-2011 02:00 PM

I would count it as two!

bfast - coffee (2), chicken

lunch chicken and broccoli (8)

dinner salad and chicken (10)

do you see a theme?

zetaphine 04-07-2011 09:40 AM

My Ketostix are still negative, so it's time to revamp my diet. I'll be reducing the amount of cheese I eat in hopes of seeing the stick turn purple.

Breakfast:
Atkins Bar
Coffee with heavy cream

Snack:
Red pepper slices

Lunch:
3 oz salad mix
1/4 c mushrooms
Chopped red pepper
1 TBSP bacon
2 TBSP ranch dressing
Sugar-free bread & butter pickles

Dinner @ Ruby Tuesday:
New Orleans Seafood
Roasted spaghetti squash
Fresh grilled asparagus

startanew 04-07-2011 01:09 PM

Breakfast: 2 scrambled eggs w/ 1 tbs butter, 1 slice ham(2.2 carbs)
Lunch: 6 turkey roll ups w/ 1 oz cream cheese, just for one cauliflower and cheese(7 carbs)
dinner: eating out so probably a chicken salad, or burger w/ side salad
Zeta- I didn't know they had spaghetti squash at Ruby Tuesdays! Yum!

I had no idea either until I read their menu online. I try to plan my meals in advance so that I can stay within my plan. I'll let you know how it tastes.

Ruby Tuesday's Roasted Spaghetti Squash was mediocre. I had to doctor it with salt.

I decided to leave the Atkins bars alone. I was only counting the net carbs and come to find out they have over 20 total carbs. YIKES. Here's today's plan:

Breakfast:
3 eggs
2 oz sausage
1/4 c cheese
coffee w/cream

Lunch:
2 oz salad mix
3 oz turkey breast
1/4 blue cheese crumbles
2 TBSP blue cheese dressing
1/8 c mushrooms

Dinner:
3 oz pot roast
2/3 c steamed veggies
