Thanks NoMoreNewClothes! You'd think I'd know better than to stick a cold fork into an orb that is vibrating with microwave fueled energy! Good tips.

Tonight I picked up Gyros meat from a Greek restuarant and stuffed it into low carb pita pockets with lettuce, onion, tomato, cucumber and a smear of yogurt. Opa!

I had chicken enchiladas using two whole wheat high fiber La Tortilla Factory tortillas. The filling was made from chicken boiled in chicken broth and then drained, shredded, and cooked again with some green chiles and taco seasoning.

Last night DH made a big pan of chicken gizzards and hearts with some Montreal chicken seasoning and served a medley of Mediterranean veggies. I just love the "chew" of gizzards and we always kind of fight over who gets more hearts!

I love organ meat (was raised on it back when it was the "cheap" meat - now it's considered luxury meat) and recently bought a couple beef tongues and some oxtails. Both make a fantastic soup base but I've always added barley to my tongue soup and can't think of a good substitute. Any suggestions?

Steak and Roasted Asparagus
 
Tonight I'm having a pan-grilled strip steak and roasted asparagus with a sprinkling of parmesan. Nommie, nommie...

I really enjoy roasted veggies; toss them in a little olive oil, salt and pepper, roast on a foil-lined shallow baking pan in a 400 degree oven for 10 minutes or so. All done, easy prep, easy clean-up.

Big Mac in a Bowl...
 
Posting lunch today. I can't wait to try this recipe: Big Mac in a Bowl. I made my own Thousand Island dressing this morning.

I think I'll have a side of steamed asparagus with a little butter, salt and pepper. I'm hungry today! :hun:

Tonight I'm having Dottie's Green Bean Casserole (made with fresh mushrooms and 3 oz. of grated cheddar), brown-butter grilled steak with cherry tomatoes. :hungry:

Thanks, Linsy, I'll try it soon. Tonight I'm having half of a Hormel fully cooked prime rib. It's a serving meant for one, I'm sure, but it's really big and meat is very rich. Delicious! I just heat it quickly in a skillet with a little butter. And green bean casserole from last night. No prep, easy clean-up, yummy.

Tonight I'm finishing my prime rib, carmelizing some Vidalia onion as a steak topper with fresh steamed asparagus sprinkled with sharp cheese. Now, who eats better than that?

Hey, I'm joining in on the LC areas and thought I'd join in with the dinner crowd too!

Tonight was: Chunks of pork loin with some chili (leftover primal chili - tomato sauce, seasonings, ground beef, spinach) poured over it. About 6 oz pork, plus 1 c chili (mostly juice). Topped it off with a 2 tbs dolop of sour cream and an oz of shredded cheese. It's cold here tonight with all the wind/rain - and we voted to eat the chili we froze awhile back. It was perfecto.

Zucchini lasagna. I think I ate a larger portion than I should have...lots of sauce and cheese. It was delicious though.

This thread is soooo good, I've gotten some good ideas for this week.

Tonight: soup made with gr beef, garlic, diced tomatoes, beef broth, paprika, parsley, sour cream. OMGosh good. Must pack it up right away to avoid extra helpings. I just made it up and seasoned for my own taste.

Might have a cheese cracker later with some dip. I'm about to go in search of some snack ideas. I had brain block last night trying to come up with some lunch box snacks. Will be my quest for tonight.

Tonight I'm having Three Cheese and Jalapeno-Stuffed Chicken Breast courtesy of Sam's Choice from WalMart. (4 g. carbohydrates per serving) And a green salad with cherry tomato, sliced cucumber and shredded cheese, home-made "Kraft's Thousand Island dressing."

The chicken is 30-25 minutes in a 400 degree oven on a foil-lined baking sheet. Again, Atkins chicks, easy prep, easy clean-up!

Started antibiotics for a sinus-infection, the guys have my roof ripped off and all over the yard, and there's a woman who left a note on my door while I was at the doctor's telling me she "needs me to correct a paper for her son tonight," with her phone number. Maybe not...I'm going to call her back and tell her so - I'm afraid she'll come banging on my door with her kid in tow. Yikes!
