Tonight we're treating ourselves to Chinese! We live in a rural area and awhile back a young Asian couple took over the kitchen at the truck stop and started up a Chinese/Pizza place. So odd, but so welcome to have something other than the usual truck stop fare in the area.
We get take out, hold the rice, and order dishes that are not fried or served in a sweet sauce. Curry Chicken is my favorite! Sometimes I boil up a little Dreamfields angel hair to mix with it to give it a Lo Mein feel. Tonight I think I'll saute shredded cabbage as my faux noodles. There really is no way to determine the exact carb count here, but I've never been thrown out of ketosis by these bi-monthly Chinese meals! |
A grilled chicken breast with stuffed mushrooms and broccoli salad.
Quick broccoli salad recipe: Take about 2 cups of broccoli, steam very lightly in the microwave until crispy but no longer frozen. Fry 4 strips of bacon and crumble into the broccoli. In a small bowl, mix 2tbsp mayonnaise, 1tsp vinegar and 1tsp splenda. Adjust vinegar and splenda to taste. Pour over broccoli and bacon. Add 2oz of shredded cheddar cheese if desired. Mix thoroughly and chill well until serving. About 10 carbs for whole recipe, serves 2. |
Green Bean Casserole...
I'm having green bean casserole and White Castle Cheeseburger Pie. I like to cook on Sunday evening to for quick lunches and dinners during the week.
The bacon-wrapped asparagus was so good last night, I might make some more and finish up the bundle of asparagus. :) |
Ribeye Steak...
Tonight I'm having a ribeye steak, pan-grilled, with sauteed onions. I didn't finish the asparagus last night, so I'm roasting some asparagus in olive oil with garlic and a sprinkle of parmesan. I may add a small spinach salad with cucumber, red onion, and ranch dressing. NummNumm...eat 'em up!
I'm also making a pumpkin bake to take to school to share with my non-Atkins friends; they made a special request today for more punkin'. |
I'm planning on making a stir-fry with a chicken breast, squash, zucchini, and broccoli. I like to add some soy sauce and half of a serving (1.5 carbs) of stir-fry seasoning we have in the drawer for flavor.

Sandyfanny - tell me about your bacon wrapped asparagus. Do you steam the asparagus first? Do you broil it after you wrap it? It sounds great and I'd like to make it! |
Finishing that ribeye...
Tonight I'm finishing my ribeye (I ate half last night), having more of that delicious Dottie's Green Bean Casserole, and a small spinach salad with Ranch Dressing.
Firkindness, the recipe for the bacon-wrapped asparagus is posted on the "Recipes from 'What's for Dinner?'" thread on this board. It's a thread I started to keep track of my recipes. I love asparagus this way; it's super easy but sort of fancy, too. |
I'm going to have a taco salad. I'm craving the stir-fry I had for lunch though...I could live on that alone! I'm kind of sick of taco salad but I don't know what else to do with this batch of taco meat I have...maybe I'll go searching for recipes.

White Castle Sausage Pie...
Nothing much in the refrigerator; no time to go to the grocery. Worked late and came home hungry. A sausage variation on the White Castle Pie ought to do it for me on this cold night...expecting sleet. Yuck!

Chili would be a good idea, but I didn't have much to work with. I ended up eating a slice of cheese and a slice of bologna for dinner. :eek: not so nutritious!
Dinner tonight is two turkey burger patties with melted cheese and a large side salad. I just ate a broccoli and snap pea stir-fry for lunch, yum. |
Too tired to cook...
Finally Friday! Too tired to cook, too wet and nasty to go out...I've put my dinner together a little oddly and in stages:
1 Hebrew National hot dog, split and stuffed with cheese, into the microwave. Half of an onion/garlic flaxseed one minute muffin with cheese melted on top - SUPER YUM! Cup of hot cocoa - also SUPER-YUM I think I'm all done now. |
Sandy, Hebrew National products are delicious. I used to eat the hot dogs when I was on a low fat plan and they're yummy. I also bought a pack of the Hebrew National salami when I was staying at a friend's house, and his sister liked it so much that she bought some for herself.
I ended up not having a turkey burger last night and ate pizza toppings instead (it was a slip up, definitely not on plan) so I ate one of the planned burgers for lunch with a salad and I'm having the second with a side of stir-fried buttered veggies for dinner. |
Heroin Wings
Tonight I'm having one of my favorite Atkins meals:
Heroin Wings, actually drummettes, spinach salad with red onion, cucumber, and ranch dressing, with a side of buttered steamed asparagus. |
Tonight its gonna be hamburger patty with cheese, green beans and iced tea. Not gourmet by any means, but it'll get the job done. :chef:

I had a huge stir-fry with onions, peppers, green beans, water chestnuts, carrots (very few), broccoli, and maybe a few other veggies that I'm forgetting + chicken and soy sauce. I also had a split one minute muffin with cream cheese. I loved it! It's much tastier than the almond flour ones. With the cream cheese it reminded me a lot of a bagel. My mom even agreed that it tasted like a bagel and she doesn't do low carb.
