Tonight I'm making buffalo chicken strips! This is the recipe I'm using that I created after looking through a few recipes.

Linsy's Buffalo Chicken Tenders
1 container Parmesan cheese (crumbled kind in the green container)
2tsp pepper
1tsp garlic powder
10-20 thawed chicken tenders
2 eggs (may need more)
1/3c Frank's red hot sauce
1/3c butter
oil of any kind for frying

Preheat the oven to 425. In a small bowl, beat the eggs. In another bowl, mix pepper, garlic, and Parmesan cheese. Dip each piece of chicken in the egg mixture and then into the parmesan cheese mixture. Fry about 4 tenders at a time in oil on the the stove, turning once until golden. Transfer to a baking sheet and bake until cooked all the way through.
Alternate method: Deep fry 3-4 at a time for 8min at your fryer's recommended temp for chicken.

Mix melted butter and hot sauce then put into a bowl large enough to fit all of the chicken tenders. Toss the chicken tenders in the buffalo sauce and serve immediately with ranch dressing or blue cheese. You could also take a silicone brush and brush the sauce on.

That recipe for the buffalo tenders looks AMAZING. :) I'll have to try that!

Today is day one for me. I'm making Alice Springs Chicken (thin chicken breast grilled topped with bacon, cheese & mushrooms), steamed asparagus and sauteed yellow squash. I've only had 8 carbs today so i needed something with a little more carbs to round out my day. :)

Don't laugh - a favorite easy meal is 2-3 hard boiled eggs, gingerly peeled as soon as they come out of the water. Mash the hot eggs with a fork, add a generous pat of butter and salt and pepper. Rich, filling, and delish.

BTW don't ever try to reheat hard boiled eggs in the microwave. I learned the hard way and had to clean egg shrapnel off on every surface in the kitchen after they exploded!

The buffalo chicken tenders are a definite success. I ended up deep-frying them and they taste like very rich fried chicken w/ buffalo sauce, and at ridiculously low carbs per piece.

firkindness - that does sound good, actually! and lol at exploding eggs... i've cooked an egg in the microwave before and it kind of explodes that way too :p eggs and microwaves do not get along.

Linsy - YUM! That looks similar to the recipe for heroin wings. Coating things in cheese and deep frying makes them delicious!

Tonight the boy is out with friends so I decided to have a little decadent meal myself... Made some chicken wings with hot sauce and butter, with a side of green beans. Just waiting for them to finish cooking. Yum yum!

Tonight I'm going to make nachos for the family and taco salad for me. I usually prepare my own taco seasoning from spices in the cabinet to make sure there's no sugar or starch, but we just bought a can of taco seasoning so I'm going to have to make due and use that so it doesn't go to waste. I'll probably top a HUGE bed of lettuce with conservative portions of meat, cheese, sour cream, hot sauce and olives.

We're planning personal pizzas:

Brush a low carb tortilla (3 net carbs) with olive oil and lightly crisp in a skillet. Smear on a TBS of jarred pizza sauce (est 1-2 carbs), top with mozzarella, pepperoni slices, mushrooms, black olives, and red onions. Put pizza on a cookie sheet in a 350 over for 10-12 minutes. Cut into wedges.

We'll pair this with a green salad with jalapeno ranch dressing.

Linsy - taco salad sounds good. It's been awhile since I fixed it!

Tonight is a treat we will finally meet the girlfriend of my oldest son and we invited them to his favorite restaurant. So I have planned my supper and have enough calories left to enjoy one of my favorite. Linguini vongole with with wine sauce, no cream, no butter and they serve fresh whole wheat pasta. Will say no to wine, bread, appetizer and desert and will finish wih an espresso.

Breakfast for dinner...it's super-cold; we had sleet and snow today. I'm feeling like comfort food, and I haven't been to the grocery. So I'm up for almond meal pancakes, sugar-free strawberry preserves and a side of bacon. YUMMY! And a cup of hot tea, for sure.

Leftover spinach "lasagna"...It's a few days old but looks fine. I might also make a fried mozzarella cheese stick on the side dipped in ranch and a salad.

A spinach, mushroom and artichoke strata (sans the bread cubes, of course) with smoked venision sausage on the side. Writing this menu out makes it look kind of elegant when in fact its a thrown together dish. One of our favorites!

Sandyfanny - The secret is about a cup of preprepared spinach and artichoke dip (1 carb per serving). I get mine at Costco, but I'm sure there are others available everywhere.

Squeeze dry 2 10oz bags of thawed spinach. Slice fresh mushrooms or use a small can of mushrooms. Layer spinach and mushrooms in an oiled 9x13 pan and sprinkle with parmesan cheese. In a bowl, beat 7-8 eggs. Heat one cup of the prepared spinach/artichoke dip in the microwave. Slowly stir 1 1/2 heavy cream into the warmed dip and then mix with the eggs. Dump the egg mixture over the spinach (poke at it with a spoon to ensure the eggs saturate the greens). Top with more parmesan. Bake at 350 for 45 minutes or until the top is lightly browned. Leftovers reheat very well!

It's a really adaptable recipe - I've added steamed broccoli or cauliflower instead of mushrooms and you can add shredded cheese if you want.

BTW - I Puddin's name. I have a cat named Gravy.

Tomato Soup...
 
Tonight I'm making homemade Creamy Tomato Soup, and I'm having a low-carb whole wheat tortilla (4 net carbs) toasted in the oven and broken into crisps. I'm spreading homemade pimento cheese on my crisps to eat with the tomato soup. YUM!

Mmmm, firkindness, that sounds AMAZING. I love having a good veg dish like that on hand, I may have to make one!!

My dinners are simple. Last night we had grilled chicken topped with bacon and swiss cheese, with brussels sprouts sauteed in butter and garlic. Tonight is sausage and cabbage. Yum.
