I made the White Castle cheeseburger pie...It's GOOD. I used real onion as well as onion soup mix, which had quite a few carbs but I didn't use the whole packet. I also didn't have any heavy cream so I omitted that and instead used an extra egg and a little extra mayonnaise. I also borrowed from the "whopper in a bowl" recipe and mixed together some finely chopped onion, mayonnaise, and shredded lettuce on the side so I can take a bite of the pie and then a bite of the mayo/lettuce mixture.

I had spinach and romaine mixed together in a salad with some tomatoes and turkey breast. I put on a bit of ceasar dressing :) It was 6 net carbs.

Hot Artichoke Dip
 
I'm making Hot Artichoke Dip to use as part of lunch I'm making for a friend tomorrow. She's dipping with crackers. I'm using ready-to-serve chicken breast strips and pork rinds as my "dippers."

Dinner tonight? No time to cook; I have to clean up my house! Quiche and Glamazon's pumpkin recipe.

I have discovered a tasty new thing for dinner! I've been missing the sandwhiches my grandma used to make and how awesome everything would taste together.

I lay down four pieces of romaine lettuce, put a bit of mayo on top, roll up a slice of turkey and place it on the mayo. The mayo holds the turkey to the leaf, so it's nice. I then put a bit of mustard, and then some cheddar cheese on top.

It's super yummy.

I had my mom make a pot of her Atkins-friendly vegetable beef soup so I could have it for dinner and have leftovers for a day or two :)

It's honestly the best soup I've ever tasted, Atkins-friendly or not. She made up the recipe with me in mind, and I am so glad that she did!

dinner - chicken w taco seasoning, black olives, cheddar cheese, shredded lettuce, guac and sour cream (basically taco salad) total (10)

total - 18

Dinner Saturday night at Provisions...one of "best seafood dives on the East Coast." (Southern Living Magazine)

I ordered a Grouper Salad Plate, which is grouper salad, sliced tomatoes, and saltine crackers - always leave the crackers. They're always stale. And I drank a Red Stripe...not so Atkins.

Delicious!

I cannot even help it. I'm making that yummy pumpkin bake again. This time, I'm going to be more careful about how much I eat! I haven't been to the store this weekend, so I'm having quiche. There're always eggs, right? :p

I had a taco salad with lettuce, hamburger, taco seasoning, cheese, sour cream, black olives, and jalapenos. I forgot to make my guacamole and put it on there! :( Oh well, there's always tomorrow.

I ate too much food. It was all atkins friendly, but the calorie point went way too high. I think it was all this binging talk :(

Rotisserie Chicken and Bacon Zucchini
 
Tonight I'm having rotisserie chicken from the deli with zucchini.

Fry a slice or two of bacon until crsip. Sautee peeled, sliced zucchini in olive oil and a little fat from the strip of bacon. Crumble the crisp bacon over the cooked zucchini.

I am making a chicken cacciatorie

Brown 4-6 chicken thighs in olive oil. About 1 minute per side. Remove from pan.

Saute 1 medium sized onion, 2 red peppers, 1 green pepper, 2 cloves of garlic in same pan for about 1 minute. Add a handful of sliced mushrooms and saute for another minute.

Add 1 can diced tomatoes, 1/2 tsp. crushed thyme, 1/4 tsp tumeric and 3/4 cup white wine. Mix together well.

Add chicken back on top of veggies and cover. Place in a 350 degree oven for about 45 minutes. Then remove the lid and turn the heat up to 375 degrees and let cook for 10 more minutes.

Remove from oven. Remove chicken and veggies to a warm bowl. Now place the pot over high heat and boil the sauce to reduce it.

Traditionally you would serve this with noodles ... I opt to eat it on its own.

Dinner at Ruth's Chris Steakhouse...
 
What a treat! Dinner at Ruth's Chris is always amazing. I ordered:
a 6 oz. filet with a lobster tail topper
a Caesar salad
creamed spinach
water with lots of lime

Delicious!

Dessert: Dark chocolate "Expresso Sin Cake" - I didn't fall off the wagon; I jumped off! Brought it home and savored it later. Amazing! I'm willing to pay for the weight gain and the sugar cravings that will surely follow. So be it. :p

I breaded boneless pork chops with parm and italian seasoning and fried them in a bit of oil. I tossed some asparagus in the leftover oil and roasted them in the oven. SO GOOD.

I think I'll make my own version of a KFC double down with the leftovers and a slice of swiss for lunch tomorrow :D.

Val, it's now available in Canada! They are really pushing it over here... I would try the grilled version.

I thought it was ridiculous when I first heard of it, but now that I'm on Atkins it seems like an idea haha.

roasted red pepper & crab bisque (some of the best I've ever eaten)
Crab cakes with lemon butter sauce
sauteed spinach
sauteed asparagus
diet coke

If you live on the SE NC coast, make this a stop the next time you're in Wilmington.

I saw a report on the new KFC sandwich "Double Down" ..... it doesn't appeal to me personally but I guess it must have an audience for it to still be available. Its only available in Canada til sometime in November.

They did a comparison with some other fast food burgers and it actually, in terms of calories, fat and sodium content, comes out ahead of others.

I probably live in the only city where the KFC went out of business.

I made the pumpkin bake/custard but substituted greek yogurt for cream cheese as i was out. It made it slightly higher carb. And gave it a weird aftertaste. Do not recommend. ;)

i live in the states and tried it on induction. i have had the grilled and the breaded, and the grilled is actually way better tasting believe it or not. the breaded is so greasy with the skin just sliding off, nothing like the picture. so gross i couldn't even finish it. the grilled is not greasy at all and held up well while eating. i don't love or crave either version, but in a pinch the grilled version is a great option. also i remember when low carbs was big about 3 years ago they had a commercial advertising that KFC original recipe chicken breast has only 12g of carbs.

Just thought of a slow cooker recipe I do that is fairly low carb

1 yellow onion (12 net carbs)
1 bulb fennel with greens at top (10 net carbs)
1 granny smith apple (17 net carbs)
2 packs boneless chicken thighs (0)
2 TBS lipton onion soup mix (8) -if you can find a lower carb onion mix great!
Salt, pepper
1/2 cup dry white wine (2)

Total = 49 carbs makes 8 servings (6 carbs per serving)

I cut fennel and onions and apples into large slices and place at bottom of slow cooker. I then place chicken on top of veggies and salt and pepper. I mix 1/4 cup hot water with soup mix and add to pot. Add wine too.

I do it on low for 8 hours.

When done I remove chicken and use a handheld soup mixer to puree veggies to make a thick sauce. Spoon over chicken to serve. Can also be used as base for soup.

The granny smith apple (with skin) gives it a great flavor! I puree the veggies because they look weird straight out of the cooker and it gives it a better flavor. Freezes ok in sauce.

Remember - most of the carbs are from veggies and you are aiming for 12-15 veggie carbs per day so dont be scared that it is a chicken dish with more carbs.

Your slow cooker recipe sounds so good, but I would stay away from fruit if you're aiming to stay close to Induction. You've done a great job reaching your goal, but, for those of us who have a long way to go, the natural sugar in even one apple could trigger sugar cravings. Since you puree the vegetables, maybe we could substitute a half cup of pumpkin and a little stevia? It sounds sort of awful, but it really might be a good substitute. :p

Stirfry beef, onion, peppers, mushrooms and cabbage with some fish sauce, soy sauce and sambal olek to kick it up ... its very good

No offense, but the idea of pumpkin and chicken makes me want to throw up in my mouth a little. Haha, it just sounds gross.

The idea of apple and chicken are kinda hard to get used to as well, but then I think of pineapple with other meats and I think it could work.

Keep in mind sandyfanny, not all of us are on Induction, and some of us are doing a modified version of Induction, like readyfreddy and I. There are four phases to Atkins after all, and this would be appropriate for those on phase 2 or higher.

Yeah - its not induction friendly! I haven't made it since starting atkins but i made up the recipe and its really good! i figured some of the maintainers might like it. You can always take out the apple for induction (although it really adds a lot!) or wait till OWL.

I cheated with dinner and still lost! My friend just had a baby and we went out together. I had blackened cajun chicken with veggies and a ceasar salad with no croutons. I say cheat because I don't know what's in the chicken, and we split a bottle of wine, and I had a coffee with khalua in it, etc. The drunker I got the more bad stuff I ate haha.

And the scale was down! I love it. Back on track today :)

I had a sausage and egg scramble with about a tbsp of sour cream and some jalapeno slices. I also mixed in a little bit of cheese into the whole thing and topped my portion with a little bit of cheese.
