Ahh, I'm triple-posting! You guys need to post your meals more. :)

I made a taco casserole--It's in the oven right now. I googled a recipe for a low-carb taco casserole and modified the recipe a little bit.

Keep in mind I don't measure anything, so it's hard for me to give an exact recipe or carb count.

I mixed about half a pack of cream cheese (about 4oz) and a handful of shredded cheddar cheese with a little bit of taco seasoning and then nuked it in the microwave for a few seconds to make it soft (this can be avoided if you use softened cream cheese, mine was straight out of the fridge). Spread it in the bottom of a smallish baking dish. Cook one pound of ground beef in a skillet with some onion, a small can of diced green chiles and some taco seasoning. I didn't drain mine, but you can if you prefer. Pour over the cream cheese/cheese mixture in the bottom of the baking pan and then top with more shredded cheddar cheese. Bake in the oven at 375 until cheese is melted and bubbly.

Be careful with taco seasoning, a lot of the packaged kinds have bad stuff in it. You can look up a recipe for taco seasoning and make your own.

This recipe was adapted from: http://www.food.com/recipe/low-carb-taco-bake-119732
I like to make recipes my own, so I made a few changes like omitting the tomato sauce from the beef and the egg from the spread at the bottom.

I thought the recipe would be okay without the egg and heavy cream because I've made and had dips before that are cream cheese spread in the bottom of a dish and then topped with chili/pizza toppings/etc and then baked. I also didn't really like the idea of the egg.

Caesar Salad tonight...

I just made a batch of homemade Caesar dressing - yum! The fresh garlic really makes a difference.

I'm having a Caesar salad with romaine lettuce, red onion, cheese and a pan-grilled hamburger steak sauteed with sweet red peppers and onion.

Linsy 10-31-2010 06:59 PM

I have a chicken breast in the toaster oven right now. I think I'm going to cut it up and melt some cheese on top with some salsa (I saw Stephanie doing this and it looked good) along with some green beans.

sandyfanny 10-31-2010 07:17 PM

Sounds yummy...

That sounds really good, Linsy. I'm going to try your taco bake dish - maybe tomorrow after I round up some cream cheese, green chilies and check out the taco seasonings. Thanks for the idea!

Linsy 10-31-2010 08:00 PM

Yeah, keep in mind it's REALLY rich! I put mine on a bed of shredded lettuce with sour cream, jalapenos, and salsa. I think it would be too rich to eat by itself.

sandyfanny 11-01-2010 07:56 PM

Taco Dip That's Dinner...

Linsy posted a delicious-sounding taco bake; I've adapted it for two servings for my dinner. I made the taco bake, used pork rinds as "dippers," and had a romaine salad with Caesar dressing. YUMMY!

Linsy 11-01-2010 09:57 PM

I made a thin-crust pizza from Linda's low-carb recipe site. It's REALLY good but I'd steer clear if you're trying to cut out cheese--The whole thing is pretty much made out of cheese! Definitely a treat, not an every day meal.

sandyfanny 11-02-2010 06:31 PM

Chicken Casserole...

I'm having a chicken casserole...chicken, mayonnaise, red onion, salt, pepper, lots of celery seed, topped with cheese. YUMMY!

Sugar-free, fat-free raspberry jello with whipped cream for dessert

fatklr 11-03-2010 11:10 AM

I will be having baked parmesan tilapia and a greek salad with tomatoes, red onions, cucumber and feta cheese.

Did the cream cheese/cheese mixture harden at the bottom? I have an issue with the egg-based crusts tasting too much like egg...so i'd rather do without.

Linsy 11-04-2010 02:15 PM

Nope! I knew it wouldn't harden because like I said I've eaten dips before that had cream cheese spread in the bottom (like cream cheese with chili on top and baked, and cream cheese with pizza sauce, cheese and toppings on top then baked). The cream cheese does the exact opposite actually, it gets gooey and yummy. I prefer it that way.

readyfreddy 11-04-2010 05:31 PM

mmm that taco bake sounds GOOD! i like the idea of eating it on salad to get more veggies! you could also use cucumber to dip?

one of my friends always made a really good superbowl dip. 1 package cream cheese, one can turkey chili and heat in micro and stir. eat with fritos.

It would probably be easily adapted to low carb. 1 pacakge cream cheese, one cup ground turkey (cooked) and some chili seasoning. eat with porkrinds.

Oopsie Rolls...Pimento Burger!

Dying for bread this week...I really don't know why. But I'm making the Oopsie rolls Applebuddy suggested right now. When they cool, I'm making myself a pimento burger, a nice juicy hamburger topped with homemade pimento cheese.

We Southern girls know pimento cheese is awesome on a burger... putting it all in an oopsie roll.

And I'll have a salad with romaine, cumcumber, red onion and homemade honey mustard dressing. And water with a squeeze of lemon.

sail7seassoon 11-04-2010 07:03 PM

I hope you enjoy your burger. The oopsie rolls will be soft but as it sits and dries out they become sturdier and sturdier and yet still as soft as bread.

You can also make them more savory by adding seasonings and spices to the eggs instead of splenda and vanilla extract.

sandyfanny 11-04-2010 07:17 PM

Oopsie question?

Sail7seas and Applebuddy, did I do something wrong? My rolls are very pretty; I browned them lightly - they took 30 minutes. But I split one to make a burger bun - bad plan. They were so thin, they didn't hold the burger at all. So I ate it with a fork...delicious, but not what I had in mind.

So, are you supposed to use two rolls when you want a bun or a sandwich, or did I do something wrong? Oopsie...

readyfreddy 11-04-2010 10:06 PM

Sandy - it always looks to me like they use one for each side of the burger. It will be interesting to hear what the pros say....

sail7seassoon 11-04-2010 10:49 PM

I am the same person.... Raquel.... sail7 is the username.... applebuddy is what/who I am..... I work at Applebee's and we call ourselves applebuddies since we all work together to help each other out.

As far as the oopsie rolls go I use 2.... :) one for the top and one for the bottom..... each are about 1 carb.... at least that is the carb count that I got off her site. I hope this helps and am glad you at least thought it was delicious. I keep them on the counter overnight, and then place them in a paperbag the next day. I don't use a plastic bag because mine tend to get too soft.

I hope you give that burger another try. :) It sounded delicious.

Shells 11-05-2010 12:07 AM

I steamed some green beans and then sautee'd some garlic in butter and tossed the green beans in ..... cooked them for a minute or two and added some fresh parmigiano cheese, salt and pepper

Linsy 11-05-2010 01:25 AM

I read a lot about the Oopsie rolls last night. I tried to make some this morning but they were a fail...I might try again tomorrow. I don't think I whipped my whites long enough.

Sandy, people use them for ALL kinds of things...there's a thread on lowcarbfriends that has amazing recipes. People use them to make french toast, pizza, cakes, you name it! A lot of people even take 2 oopsie rolls to a restaurant/fast food place and order a hamburger or sandwich then replace the bun or bread with the oopsie roll.

http://www.lowcarbfriends.com/bbs/lo...pe-thread.html

Edit: My dinner was kinda bad, I ate the toppings off of a slice of pizza and then the last slice of my "cheese crust" pizza that I made a couple of days ago, dipped in ranch. We have company and I'm sick so I look like a mess and didn't want to stay out there too long.

Linsy 11-05-2010 08:48 PM

Grilled chicken salad from McDonald's...the ranch has 9 carbs!! What do they put in that stuff? I used 1/2 of the packet.

islandchick1 11-05-2010 09:41 PM

Hi girls! :)
Thought I might join in.
We ate out at my FAV. Steak house tonight.
Had a cup of broccoli/cheddar/jalepeno soup. A small tossed salad. Broccoli & zuccini mix (took out the cooked carrots -YUK!) and 1/2 of a 10 oz. sirlion w/lemon butter
I'm reworking my Atkins menus. Out of convenience I find myself eating more or less the same things everyday. Which is fine, except I think it might be part of the reason for my stalls - don't know for sure but I'm just going to see :)
So I'm going to be checking out what you guys are eating for ideas :D

sandyfanny 11-07-2010 05:43 PM

Beef Tenderloin...

Tonight I'm having a beef tenderloin filet, pan-grilled with browned butter and carmelized onions. With it, I'm making a salad with Romaine lettuce and homemade Caesar dressing.

My grocer puts the most amazing cuts of beef in the "sell bin," and there's nothing wrong with them...they're always three or four days before the "sell by" date. Check your grocery or butcher for luxe bargains. :)

fatmad 11-07-2010 06:28 PM

Made a small pot roast in the slow cooker, whipped up cooked cauliflower with cream butter and some salt, for mashed "potatoes" and a green salad, that was supposed to be greek, but I had to throw out the feta, it was slimy, so didn't want to risk it.
Even hubby ate the cauliflower, and he hates cauliflower. but not tonight!

islandchick1 11-07-2010 11:16 PM

I had a stir fry that I just kind of made up as I went.
I made a marinade from soy sauce, water, splenda, cinnamon, and ginger for my beef strips. While they were soaking I shredded some cabbage, then in varying shapes cut up 1/2 of a jicama, 1/8 of a red bell pepper, 1 whole jalepeno, 1 stalk of celery, a few cauliflower florets, & 4 green onions using both the heads and the stems.
It's pretty delish
After having it analyzed on nutrition data.com each serving has 394 calories
and only 3 NET CARBS.
I Think I'm going to take a portion for lunch tomorrow too :)

Shells 11-08-2010 07:40 PM

I had a bowl of Miso soup with a tiny bit of tofu and wakeme ..... 4 grams of carbs and it warmed me up nicely

sandyfanny 11-08-2010 08:12 PM

Fast Foodie...

A late shopping trip to the grocery and a friend with a dead battery added up to fast food tonight...a three-piece Hardee's chicken tender snack (with sides of nothing), dipped in my own sugar-free homemade honey mustard dressing. Not ideal, but not bad in a pinch.

9 carbs in my Hardee's chicken...

Linsy 11-08-2010 10:03 PM

I'm having a taco salad from my favorite Mexican restaurant. Lettuce, shredded beef, sour cream, salsa, guacamole, and cheese. I yearn for the beans, crunchy shell, rice...but I don't need those things! I'll be happy with my salad. :)

Linsy 11-09-2010 06:33 PM

Another taco salad. I made a batch of my own taco meat last night so I can have taco salads for a few days. One of my favorite/easiest meals. :)
Mixed baby greens salad w/ taco meat, cheese, salsa left over from the restaurant last night (yum!), cheese, sour cream and guacamole.

islandchick1 11-09-2010 07:36 PM

I'm making some hot deviled eggs. I'm making 12 halves so I can take some for lunch. Plus I'm making that cabbage stir fry thing again for tomorrow. So I'll mix up the marinade and soak the meat overnight and go ahead and cut up all the veggies. When I get in from work tomorrow, I'll just have to heat up the pan and throw everything in :)

Dinner at Crab Catchers...

My all-time favorite seafood dive; the decor is a nightmare, but the food and service are great. I ordered my Atkins favorite: grilled scallops and two fried oysters. The hushpuppies were right out of the fryer - couldn't stand it...promptly ate two. I consider that virtuous; I could've eaten a dozen! :)

I'm with you, SunnyDC. My favorite dinner is prime rib and a big, fresh salad with bleu cheese dressing. Yes!

At home, I love Linsy's taco salad. I've made it twice in a week. Delicious and super-easy.

Linsy 11-10-2010 07:43 PM

A hamburger patty (or two) with cheese melted on top and a salad with ranch.

Great recipes can't wait to taste it.... one question..how much is " some tomato paste ":^:

SunnyDC 11-10-2010 09:59 PM

sandyfanny-- so funny that u mention hushpuppies! it's been years probably since i've been anywhere that served them, but recently i went to a seafood dive on a local island to have crabs, and they served us delicious hushpuppies! i ate a few too many, ok way too many, but i coulda ate a whole bowl. there were a few leftover, but instead of taking them home, i fed em to the seagulls. (i regained some of my sense! LOL)

SunnyDC 11-10-2010 10:01 PM

oh i forgot, for dinner i had perdue baked chicken breast cutlet (italian seasoned) and creamed spinach prepared from the grocery store.

islandchick1 11-13-2010 07:38 PM

I had my very spicey chicken soup. The weather is chilly so it really hit the spot. It has chicken breast, jalepenos, rotel tomato, celery, green onion tops and bottoms, red bell pepper, jicima, carrots, cilantro, zucchini, & tomato sauce

JustSmurfy 11-13-2010 09:08 PM

I had kabobs with steak, red onions, mushrooms, and red and green bell peppers. It was amazing.

Now that sounds yummy! :) Haven't made kabobs in a while...thanks for reminding me about them!. I had bought these new stainless steel skewers called FireWires which are GREAT. They are literally interwoven SS wires with a SS needle on the end and you can shape them anyway you want them on your grill as the space allows.
