Sandyfannys cauliflower soup ... with some variations. I got it all going and then went to add the chicken broth only to find that I had beef broth and mushroom broth and vegetable broth and seafood broth .... but no chicken broth. So I used organic beef broth and added some roasted garlic to it ... it was yummy

What a great variation, Shells! Question: Did you roast your garlic yourself first? In the oven? Or do you have a prepared roasted garlic in your stores?

Val - i went shopping yesterday and they had the shirataki noodles for buy one get one free! I have about 8 packs in my fridge now. I love them. I got some alfredo sauce too (2 carbs for 1/4 cup) so I may try them with that and a little sauteed panchetta and spinach tonight.
I was starving yesterday. I think I didnt get enough fats? Today - bfast macadamia nuts (2) and sliced cheese (1), coffee (2) snack - 10 green olives (2) lunch - veggies (5), cheese slices (2) and lunch meat (1) dinner - miracle noodles with alfredo spinach and panchetta (8) total 23 |
My mom is making a big pot of soup with squash, onion, celery, stew meat, and a few other things. It smells delicious. She's making it for everyone but only using veggies that I can eat.

Spinach Salad
I'm doing that weird thing where I don't want anything I have to eat; I can't even think of anything I want that I don't have!
I think I'm just too tired. Eventually, tonight I've decided to have a spinach salad, a little red onion, maybe with bacon, and a few slices of pork tenderloin. I'm making honey mustard dressing to make it more interesting... :yawn: |
The soup is FABULOUS and it's not even done yet. She had me taste it and it's delicious. It simmered down so the veggies are tender and the soup is thick almost like stew.
I have a question about green beans...I've seen dishes on a low carb website containing green beans that say they're okay for induction, and when I look it up on google people say green beans/string beans are also okay for induction. However, the Atkins website doesn't have green beans listed as an acceptable food. Can we eat them? My mom wants to put some green beans in the soup to give it more substance but I'm not sure about them. Sandy--Thank you! My mom has been overweight all of her life and dieted a lot over the years, including Atkins so she's familiar with it. She's very supportive and tries to do whatever she can to help me. And yeah, the weather is definitely cooling off in California which means yummy comfort food...minus the breads and potatoes of course. |
Didn't plan the day out, and hubby didn't do any shopping. Got home tired and hungry, nothing for supper in the fridge, but then, inspiration struck.....
bacon and eggs. all day breakfast, lets hear it! I had a bowl of coleslaw later. mmmm now we can go shopping. |

fatmad, I love breakfast for dinner! My fiance and I do it once in awhile and it's such an easy fun dinner.
I'm having my last non carb counted meal right now before I start induction tomorrow. I haven't gone nuts or anything, but I am having whiskey with diet coke! Salad has green pepper, black olives, tomatoes, meat and some light ranch dressing. It's so uninteresting because I just want to make something with the new food and recipes I got today, I want to try out some of the new meals I learnt! |

Tropical Storm...
I'm home waiting on the rest of the rain...not cooking tonight. I'm having a few slices of pork tenderloin dipped in homemade honey mustard dressing, some pork rinds and ham salad, and sugar-free jello with whipped cream.
I'm still doing the "There's nothing I really want" thing. Very annoying. :?: |
I am on a serious egg kick. I need to go to the market. I'll probably have a couple eggs again for dinner :p.

Shirataki Noodles with panchetta, spinach and alfredo (can add onions if you like) 1 Package Shirataki Noodles. Drain. Parboil for 4 minutes. Drain fully again. In a sauce pan on med or med high, add evoo and 3 tbs panchetta. When panchetta starts to get crispy, add 4 cups spinach (it cooks down). Stir. When spinach is wilted add 1/4 cup alfredo sauce (i found one that has 2 carbs for this amount). Stir. Add in noodles. Stir, add salt and pepper. Enjoy! Total Carbs Shirataki noodles - 2 net carbs (check your brand) spinach - 1 net carb panchetta - 0 net carbs evoo - 0 Alfredo = 2 Total 5 carbs |
I had a baked chicken breast with some cheese melted on it and two tbsp's of salsa. 2.5 net carbs.

Sausage, Egg, Cheese Quiche
Tonight I'm having breakfast for dinner - sausage, egg, and cheese quiche and a green salad - mixed greens, English cucumber, and honey mustard dressing. YUM! :wave:

I had breakfast for dinner too! I had 4 pieces of bacon and 2 eggs. I put two pieces of bacon aside with some spinach and feta for a snack later. I need to up my carbs for vegtables for today.

Dinner at Outback Steakhouse...
Early dinner at Outback. For the second week in a row, I watched one of those wretched onions sit in the middle of the table...but I just ignored the nasty blooming glob of fried white flour and salt. I ordered:

I made coney island chili. It was yummy! Hamburger, tomato paste, onion, garlic, mustard, seasonings, chopped jalapeno and a little bit of jalapeno juice. I topped it with some mozzarella cheese and had that and a salad.

That chili sounds good! I might have to make some, it would be good to have some pre made food so I don't have to get up early just to make breakfast and lunch every day.
Dinner last night wasn't the greatest, I had 2 carbs with a pepperoni and cheedar cheese. It was one of those combo packs you get at the gas station. My friend had a baby so we were running around to go see her, then on the way back I hit up the store because I was just beat (we bus and skytrain everywhere so everything just takes longer) |
I went out to dinner tonight and had a salad (I brought a little container of my own dressing from home), gazpacho, and a peppered New York steak with broccoli and butter.

Clean out the refrigerator...
Came from visiting my daughters...always fun, but I miss them the minute I leave. Too tired to cook, so I cleaned out the refrigerator.

I had take out for the first time since starting induction, I got the mediterranean salad from panagos which has lettuce, feta, olives, green peppers, onions, cherry tomatoes, with some chicken on top. As per their website, minusing the fibre it was only 10 net carbs with the balsamic dressing!
Which is great for me because I find I struggle with getting enough carbs, or enough calories (some things are just so high carb and low calorie, or high calorie and low carb!) |
I was in a weird food mood tonight. I didn't feel like food. Just dessert!
I had a bowl of cottage cheese with SF pancake syrup and macadamia nuts and a big bowl of greens. Kinda random but it hit the spot :). |
Lunch out...dinner in!
I had a great lunch out today: Grouper Salad Melt with tomato and provolone...minus the English muffin.
Easy dinner: the Bacon and Ham variation of the Breakfast/Brunch quiche. And now I have my breakfast all made for the next several days...just pop a slice in the microwave. |

I hade a baked chicken, two tbsp's of salsa, and about an oz of cheese metled on top. Overall it was about 2.5 net carbs.
I think this is going to be my new favourite dinner! I made extra for lunch today :) I'm all out of veggies from this past week though, I need to go grocery shopping. |

Baby Back Ribs...
Tonight I have the absolutely delicious (and easy) Baby Back Ribs already cooking. I'll have a small spinach salad, homemade ranch dressing and maybe some asparagus with butter.

I had a salad with ranch and some chicken salad on the side. For dessert I made a little "cheesecake" snack...a wedge of cream cheese put in the microwave for about 5 seconds, enough to make it easily mixable and warm but not hot. I added a little bit of splenda and a dash of cinnamon and mixed it all up. It was way better than I expected.

I had a tuna caserole with no pasta. It was yummy, it had cheese and a very small amount of corn and peas. It was about 3 carbs.

Ribs from last night...
Tonight I re-heated some of the Baby Back Ribs I cooked yesterday. They're even better tonight with a side of steamed asparagus and butter. YUM!

2 smallish hamburger patties with finely chopped onion and cheese on a bed of lettuce with some mustard for dipping and a pile of jalapenos.

I had 2 oz of romaine lettuce with tomatoe cut up and mixed with a bit of ceasar dressing and two slices of bacon. Overall it was 10 net carbs. (I was too low on carbs earlier and I'm trying to increase for OWL)
