The Chinese places I go to will do steamed entrees rather than stir-fried. I usually get chicken and broccoli or beef with string beans. If you want soup, I would stick with hot & sour or egg drop. And I typically go for brown rice to minimize the blood sugar spike that comes from white rice.
I've successfully eaten at PF Changs (a national Chinese chain) and lost weight the next day -- can't remember everything I ate, but definately the lettuce wraps.
