Default This Weeks Healthiest Food - SWEET POTATO

http://www.whfoods.com/index.html?PH...68e93580e

Oooh, another good one. I LOVE sweet potatoes, but find I don't eat them that often. They are a bit on the sweet side, which always frightens me. I'm always afraid it's going to send me on some kind of sugar binge.

I never quite understood the reason for smothering them in marshmallows and syrup and brown sugar come Thanksgiving time.

-I love them just plain, baked in the oven, til soft.
-Made into sweet potato "fries", spicy with a little cumin, pepper and a bit of salt.
-They're great in soups too.
-Then of course there's sweet potato pie, but we won't get into that.

So, what's your take on them? How do you like to prepare them?

I love sweet potatoes too. My favorite way to eat them is just baked in the oven and eaten plain. I don't even use a fork....I eat it like an apple...skin and all!

Last year I discovered I like them baked... now I know I like them as "fries" as Robin describes (we also add some smoked paprika and cumin).

I can't wait to see the other ways I like them. I'm thinking soup next...

How do you make sweet pototoe fries without using cooking oil? I love fries and love sweet potatoes... I think the idea of combining them would be great....

I slice 'em and stick 'em in the oven after a light spray a tiny bit of with PAM and a sprinkle with cumin, black pepper, cayenne pepper, and salt. In the past, I've also used a small amount of olive oil, but I seem to use less oil with the PAM spray.

I looooooove sweet potatoes

My favorite is baked in the oven till soft as well. Then I mix some ground cinnamon and pumpkin pie spice up with 2 tablespoons of fat-free cream cheese, then spread it over my potato.

That's usually how I always eat them.

I used to make sweet potato "fries" all the time but I haven't made them in a while. Sweet potato "chips" are also good (slice them into rounds and put in the oven).

I also just like plain sweet potatoes.

The last sweet potato I had, I cut it up into small chunks and threw it into a crockpot with split pea soup and let it all cook together till nice and tender.

Yum!

Sweet potatoes are called kumera here and are eaten a lot.

I love to bake them - the restaurant I was at on Sunday made a divine baked kumera salad which I'm going to try and replicate. They're also great in soups...

Hmmmm one of my favorite food and way high in potassium. I bake them like you would a normally potato then add a pinch of ICBINB, splenda brown sugar and cinnimon. UMmmmm I'm going to have to go buy some.

I just bought a giant bag of pre-cut sweet potato fries at Costco. They are on the menu for tonight!

What's odd is I've tried a couple of different brands of sweet potato fries and didn't like them at all.

I guess maybe because I bought them expecting that "french fry" taste, only a healthier version, and they just didn't measure up.

...and by "fries", I mean sliced sweet potato in spear form. They aren't frozen fries or anything...just refrigerated sliced sweet potato.

I loooooove sweet potatoes. I like to do do them as oven 'fries' in the winter and grilled during the warmer months. My fave seasoning is some minced chipotle, minced garlic, salt, peper and a little orange juice to get it liquidy enough to toss in. Then, of course, cooking spray to aid with the browning.

Sweet potatoes don't seem to get crisp like regular potatoes, but they do get super-tasty.

The mystery is that they taste so similar to winter squash, and yet I really don't love winter squash, even roasted with an abundance of oil. Sweet potatoes are magical.

Request: Could the person (LLV or Robin) who posts the week's healthiest food also post the nutritional benefits? (Or would that be violating copyright?)
