    This sweet 'n savory creation is 50 percent soup, 50 percent stew, and 100 percent AMAZING!!!
    Ingredients:
    2 1/2 cups reduced-sodium fat-free chicken broth
    1 tbsp. cornstarch
    2 tbsp. cider vinegar
    1 1/2 tsp. chopped garlic
    1 tsp. dried parsley
    1 1/2 lbs. raw boneless skinless chicken breast
    1/4 tsp. each salt and black pepper
    3 cups peeled and chopped Fuji apples
    2 cups carrots cut into 1/2-inch coins
    2 cups roughly chopped celery
    1 cup roughly chopped onion
    6 slices center-cut bacon or turkey bacon
    Optional seasoning: additional salt

    Directions:
    In a crock pot, combine broth with cornstarch, and stir to dissolve. Add vinegar, garlic, and parsley, and mix well.

    Season chicken with salt and pepper, and add to the crock pot. Add all remaining ingredients except bacon, and thoroughly stir.

    Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until chicken is cooked through.

    Remove chicken and place in a large bowl. Shred with two forks -- one to hold the chicken in place and the other to scrape across and shred it.

    Stir shredded chicken into the stew in the crock pot.

    Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.) Chop or crumble bacon, and sprinkle over each serving!

    MAKES 6 SERVINGS
    This recipe was on Hungry Girl this morning. Anytime you add vinegar to soup, it's delicious.
    Yesterday I found a new recipe for Sweet Sour Soup (meatless for my lunches) This one had cooked apples in it and since I have tons of applesauce frozen, I tried it. It's now my favorite soup and the apples don't add that many calories. I'll be back later with my menu, have to get it together, BTW why can't we do a copy and paste on Fitday?

  • Whole Pork loin is so cheap right now, we have it on sale for $1.79 per pound. DH cooked last night and the loin was big enough for supper again tonight. Yipee, no cooking today other than coming up with a diet dessert. After googling what percentages I needed in my menu, I'll post those stats. Maybe it'll prompt me to get my protein up.

    Calories 974, don't preach, I ate the peanuts at bedtime to help get it up.
  • I'm really going to quit fooling around and get to work after I post this recipe on my DD Facebook this morning. Anyone try making fries out of carrots?
    Hibiscus was open yesterday, so beautiful. Then my Charlie Brown tree with new leaves.

    Snowy (and very pretty!) here. There’s about 6” at my house, but I think it’s over for today. It’ll all be melted by morning.

    Gayle – I hope all is well with you. I take it that you’re still very much enmeshed in DD’s marital problems? This, too, will pass… I know how much you worry.

    Rosey – how’s your MIL doing? I’m so impressed that you’re continuing to use the pool. You should start losing again, yes? Gawd knows, you don’t eat anything! I look at all these menus that are posted and think that it’s not enough to keep anyone alive! You must all be 5’2”!!

    Gail – I do enter my food intake on SparkPeople… although I’ve fallen off the wagon AGAIN and apparently hurt myself. I’m feeling out of control again. This is the story of my life.

    Bobbi – sweet and sour soup sounds good! I made a quickie (and very tasty) vegetable soup, and I’ve been eating that a lot. I’ll look for your recipe. Eiuuu, fries out of CARROTS? Weird and strange… The hibiscus is beautiful and the lemon tree is tenacious!

    I have NOTHING to report! The snow is already melting, and the WF think there might be more coming. I sure wish I was at home instead of at work! Sigh…

  • Howdy all from the house that's stinks....I am cleaning the oven after a few nasty spills. A gray smoke is blewing out of the kitchen and Dash is sneezing. Windows and doors are wide open. Hopefully I won't set off the fire alarm.

    Rosey...you have become a hottie chick. Hmmm few more weeks of pool walking and you will be our first calender girl. Picks your month girl!

    Gayle...What's happening with DD and sil? Yes I meant little letters and no D! I would kill for me time...worse part of retirement is lack of me time.

    Weather for the middle of the country and then East coast sounds awful. The cold front is supposed to stop at our state border...please keep it up there. All suck in a deep breath.....

    My regular Wed Winter partner Bob ( as opposed to my Summer Bob) is out taking care of his sick wife. So yesterday I played with a woman from Holland who now lives in Canada. Brunhilda knew everything. I said we have had such a mild winter and she refuted even that...well maybe it was cold in Canada? She was hugh...not fat but probably wore size 14DD shoes! I felt like a gnat flitting around her. Germanic accents and behavior don't intimate me after 50+ yrs with DH. She admitted they sold their 26' RV and were wintering in a van. "That has a lovely queen size bed". Huh Wanted to ask what they did besides sleep ....no room for anything else, But sometimes I do remember to shut my mouth. Her real name was Margret, but she'd look good in a cowhorn hat! Oh, we came in 2nd.

    We have a bridge player who has about given up eating. Her weight is probably 80 lbs and she looks awful. Am suprised that she didn't get the flu and die. She fell last Tuesday and broke her hip. Everyone was saying "she's gonna die" especially when they did surgery that same evening. I told them all the only way she'd die was if they shot her. That doing the surgery asap prevented clots and that this was probably the best thing to have happened that neither the hospital or rehab would let her"not eat." I was just about boo'd but guess who is right. She went to rehab Sat and visitors Sunday report she looks good and has gained weight. 20 yrs of geriatrics I should know my stuff.

    Like Gayle, I am involved in a child's marital problems. It is very stressful.

    FitDay will no longer come up on my work computer. I will use My Fitness Pal at work, I guess. I like FitDay only because I am used to it and have lots of custom foods entered.

    Last night, I posted my menu on here and it disappeared. Doggone it - one day when I stuck to plan and it's gone.

    I work on a military base. Yesterday they had a security breach and shut the base down. The traffic jam created was like something out of Los Angeles. This is a very small town and we aren't used to traffic. Actually security breaches are a little scary.

    OK. Off the pity pot.

    The Good News is that I still weigh what my ticker says: 157. This is my lowest and what I weighed in early January. I have had a lot of deviations from healthy, low cal eating in the last few weeks, so I am elated by today's weigh in.

    Karen, my girlfriend plays duplicate bridge. She always has some outrageous story to tell about peoples' bridge playing behavior. I really don't get why those people are so contentious. It seems to me like they all think they know everything and that creates problems.

    Gayle, that is scary about a security breach where you work. Glad everything turned out ok. Congrats on the good weigh in.

    Karen, glad the lady who broke her hip is better & has gained weight.

  • Hi everyone another snowy day here. just got back from running errands. i did some groc shopping and stuck to my list. nothing extra not even a magazine or new toy for the dogs dh had therapy today while i was shopping,and he says he might be feeling a little better . Jess im 4' 9" now. i kinda shrunk in hght too. Bobbie i copied that recipe from hungry girl and am going to try it. Ive been looking on line for a swimming suit. right now im using biker shorts and a tank with a sports bra under it. ive seen some i like but have no idea what size. no pool today but tomorrow for sure. nothing pressing. plan to watch american idol again tonight. hope your evenings bombdiggity

    Rosey...let me know how the Hungry Girl chicken soup turns out. As to swim suits, I'm sure you'll find something online.

    Amaran...I made some sweet & sour cabbage soup a couple of days ago that has apples in it, oh so good. The calories are really low too, no chicken in it because I use it as a low calorie lunch.

    K3...I had to read your comment about the Hungry Girl soup twice, bacon? Geeeez, I didn't notice that ingredient. But I haven't made it yet either. I love bacon, DH eats the pepper bacon and I can't decide if I want to spend the calories on the real thing or that nasty turkey bacon. I used to play bridge years ago but our game has always been 500. We were in two different couples club, I miss the old days and the card games. We used to try outdo each other on what we served for lunch.

    Glynne...sorry for your stress with kids. We've all been there, done that. My 21 year old grandson is a constant worry for me, he drives back in forth 45 minutes one way to school and work. Highways are so bad and I've prayed more for him that I ever did my daughter when she was that age. I just have to give my stress to the Lord and let him deal with it.


    Donna.. I live on veggie soup for lunch in the winter time, its a wise decision because it fils you up and you can save your higher calories for supper. Yup, the lemon tree wants to live. I learned my lesson, it stays inside with a growing light and blankie like K3 suggested.

    Carbs 47% (should be 45-60% range)
    Protein 21% (should be 10-35% range)

    Fiber 39 grams
  • Red Cabbage Sweet & Sour Soup
    2 med onions
    3 cloves garlic, minced
    2 tsp chicken bouillon
    6 cups thinly sliced red cabbage (I used green cabbage)
    2 TBS brown sugar
    2 TBS balsamic Vinegar
    1 large can diced tomatoes with juice
    6 cups of water
    2 apples peeled and diced. (I used 16 oz applesauce, twice as much as called for but that's how I freeze my apples) Extra calories were worth it.
    Saute onion and garlic in olive oil. (I used spray) Add chicken bouillon and water. Add cabbage, brown sugar and balsamic vinegar. Cook until cabbage is tender. Add tomatoes and apple, cook until apple is just tender. (I dumped everthing in at once and cooked it)


    I ended up with an 8oz bowl with only 47 calories. I ran out of cabbage, didn't have the full 6 cups + more apples so your soup will have different calorie value than mine.
  • Good morning ladies,
    Today was weigh in day and I only lost 1/2 lb. That darn fat just don't want to go away.
    As usual I'm packing for the camp. Both our boys and their gf are coming with us. It's the last weekend of hunting season. All our hunting friends are coming to our camp Friday and again on Saturday night to eat. I'm making 2 desserts. Is that tortue or what. Dh and I decided with that many people in our camp and all the cooking this weekend that we would not haul things home and save stuff until next winter. We will go back next weekend and take care of all that.

    Bobbi~I'm sure happy that your Charlie brown tree will make it. Maybe you will get lucky and get a lil lemon this year. Dh and I were watching the news this morning showing all the snow. It would be fun to get snow. So beautiful. Unlike all the rain we have been getting.

    Rosey~ we had an above ground pool when our boys were young and I loved it. I also did some walking and other exercises in it. I wish we had it now that I'm serious about losing weight.

    Gail~I'm glad the base issue turned out ok. Sometimes our interstate has bad accidents that close the road and they direct traffic thru our town. Horrible. We can't get out of town. I guess they want to keep the highway flowing. Makes it bad for us country folks. Congrats on your ticker weight.

    karenfl~ I soooo need to clean my oven and I also put it off due to the smell. I have a self cleaning oven but it smells and smokes. It's nice when it's clean though. My oldest ds is taking all kinds of test and getting his certifications to work in the refineries. He hasn't started the work part yet but so far he's happy with his career move. I think he'll do great.

    Donna~did you get more snow? Seems like everyone is getting snow. All we get is rain and more rain.

    Carol sue~I was reading about your bread problems. It's only since I started this diet a year ago that I realized that dessert is my issue. I crave that trash. How come it couldnt be raw veggies I crave. Lol!!

  • Cajun - No one ever got fat eating veggies! LOL I don't know why I'm not interested in sweets. Sometimes I get nauseated after I eat something really sweet, especially on an empty stomach.

    My new oven is self cleaning but I am afraid to do it. Everyone says it gets sooooo hot. It now has some spills in it and I'm going to try to clean them out with some no fume oven cleaner. That stuff doesn't really work, but I can't imagine having my windows and doors open when it's only in the 30's.

    Bobbi - Did you ever freeze your soup? I did it for the first time and it worked out good. I gave away 3 jars of the soup but was still left with a lot. I had 3 plastic deli containers and I filled each and put them in the freezer. I just ate the last one yesterday and I'm ready to make a new batch.

    Rosey - You are doing well on your menus and your pool walking. Good luck on finding a suit. I have found that I usually require a suit 1 size up from what I wear in other clothes. It would be very hard to buy one when you can't try it on, first. Are you allowed to return them if it doesn't fit?

    Donna - It is so easy to fall off that wagon, isn't it? Just get right back on and don't look back.

    Gailr - Fitday at work????? We would have been shot at sunrise if we had attempted to access a personal site on the work computers. LOL They were all tracked.
