Before baby I was almost at goal. I tried to make every meal count as much as I could nutrition wise (not so much now
)
But I made a point of haveing a veggie with each meal. I would either mix in a veggie with my eggs, like spinach or grren and red peppers (my favorite was egg white, spinch and feta cheese omlet) Or I used to make "hashbrowns" but instead of cut up potato, I cut up zuccinni and used that in place of the potato. I used non stick pray, and adding chopped onion and red / green pepper and all the seasonings that I would add to breakfast potato mix.
I've also made omlets with asparagus, which some people really like, I can take it or leave it. Depends on your taste.
I just always felt that the added veggies with breakfast increased my nutritional intake with out greatly increasing my cals.
