Hello, I have posted this on another thread but thought it would be fun to keep it in the 300 pound thread especially since I spend most of my time here. :) I hope the idea catches on and that we can get ideas of what to have for dinner.

I sautéed: extra lean ground chicken, leeks, and mushrooms then added some tomato sauce and poured this on top of raw baby spinach. It was yummy.

I did a weekly meal prep the other day, main diner courses, grilled chicken, asparagus and quinoa, and the other is turkey meatballs, roasted butternut squash and brown rice. My meals get repetitive, will have to lurk in this thread a bit. I also keep ground turkey, and mixed veggies ready in my fridge, grab, heat and go seems to work great.

I'm on a sauteed kick. Last night I had sauteed mushrooms, bell peppers, and asparagus with ground beef with olive oil. For lunch today it was that with chicken and tonight it will be ground beef again. lolol. So good! I put hot sauce in it just before its done cooking. Amazing!

watchoutforthatcar I usually sauté my dinner. I just find it easy and I end up just using a little olive oil, coconut fat or butter. :)

Tonight I am having:

spicy black beans (can of eden organic black beans with chili peppers)
canned tomatoes mixed with the beans
bag of frozen peppers and mixed veg. thrown in (have no more fresh veg)

I'm going to make bierocks this weekend. Ground beef, cabbage, and onion sauteed together and served in pita pockets. My Danish grandmother would hit me for putting them in pita pockets but they're easier than making my own bread, and fewer calories. :3

Locke I had never heard of bierocks and had to look up images on google. They look so good. Do you use regular cabbage or sauerkraut? I noticed some recipes use sauerkraut. I love sauerkraut but have never cooked with it I usually just eat it plain.

I am going out for brunch tomorrow so will aim for a lighter dinner.

I do very well when I follow Denise Austin's eating "rule" (or at least this is where I first heard of this lol):

Breakfast - eat like a King
Lunch - eat like a Queen
Dinner - eat like a Pauper

so dinner for me is usually a bowl of oatmeal, fruits or veggies. Luckily for me, I live alone so I don't have to worry about feeding anyone else. lol So while I won't be posting much, I will be lurking this thread for ideas!

I'm not in the 300 club, but I'll post if you all don't mind :)
My bf loves Shepherd's Pie, so I'm making a variation of it with lean ground lamb, a mix of potatoes/cauliflower and a base of fresh corn. I was going to make it with ground chicken, but lamb was on sale this week. We have recently tried going dairy-free due to digestive issues, so I'm adding just rice milk and a trace of olive oil to the mashed potatoes/cauliflower mix. I hope it turns out well! I took the idea and modified the recipe from Martha Stewart's website, she called for 6 tbsp of butter (eek)...

Mmmmm so many yummy meals have been posted and yes all are welcome!

Last night I had oven roasted cauliflower with some parmesan and oven roasted curry shrimp. It was yummy.

Not sure about tonight but will post later.

Trying something new.

Thai Curry Recipe
Ingredients:
1 tablespoon red curry paste this is less than original recipe called for use 1 tsp to start
any kind of meat or seafood
1 tablespoon coconut oil
minced garlic and ginger if desired
fish sauce or tamari soy sauce
1 can coconut milk

green onions plus lots of other veggies. Anything you have on hand. We like carrots, peas, bok choy, cauliflower, red peppers....

Method:
1.Heat up a pot with cooking oil.
2.Saute the red curry paste until aromatic with the garlic and ginger then add tamari soy sauce
3.Add stir fry veggies and meat then cover with coconut milk to finish cooking.
4.If using shrimp add at the end
**I added cashews to give it a nutty flavor.

I'm cooking my girlfriend beef stroganoff for dinner tonight. I'm going to try to send home as much as possible with her, but I'll probably be eating small portions of it for a few nights with tons of veggies to make it filling. She loves pasta and I'm trying to limit my consumption of it... bah.

After that it'll be the usual chicken breast & green beans. I've been eating saurkraut as a second side for this past week- I forgot how good and low calorie that stuff is. Yum.

Tonight its shredded BBQ chicken.
2lbs bonless chicken breast
1 cup BBQ Sauce (the one I used was 45 cal/per serving)
1 cup diet coke
2 teaspoon seasoning salt
Crockpot 6-8 hours, (shred chicken 1 hour before serving so the sauce soaks in)

and some kind of veg. (probably broccoli)

I finally made myself cook something substantial...

Quinoa ,Kale, Random frozen veggie Caserole topped with a thin layer of sweetpotatoe (trying to reduce fat contents so avoided the urge to add CHEESE ) .

For a badly planned /disorganized cooking job it actually turned out pretty well. I tend to have luck in the kitchen or maybe I'm just... not that picky. ;)

If you haven't tried it yet, the cauliflower alfredo is an awesome healthier version.

Another option is to put your pasta into a pan when it's al dente, add some nefuchatel (light cream cheese), milk, salt and pepper, and parmesan cheese. It's a quick version.

Everyons dinners look so amazing mine pale in comparison.

So last night I finally finished off the Quinoa caserole i'd made earlier in the week.

Today I made a lazy soup, mushroom soup base (salty but... vegetarian) with black eyed peas, and brown rice pasta (corn and pease too.. what can i say I love me some carb laden veggies. And a can of mushrooms, and then spices. It's super hearty so that should be my soup for the week. :)

Steamed salmon, 1 cup of brown rice, 2 cups of mixed veggies and a lemon, ginger, garlic dipping sauce with a tsp of soy sauce for added flavor. That with a 16 oz cup of green tea. it was good :)

Lunch has been my largest meal of the day. Then I snack on small healthy things through out the day. (no nite snacks)

baked chicken spiced with cayenne pepper and a bit of lemon juice, salt and pepper. once it was done cut it into chunks on top of a bed of romaine lettuce, baby spinach, green onion, diced tomato, 2 tablespoons of sunflower seeds and drizzled with balsamic vinaigrette. and for dessert a small serving of butter pecan ice cream (I know the dessert isn't healthy but I've been craving something sweet all week)
