Roasted vegetables: take a mix of biggish chunks of vegetables, toss them in a little olive oil and balsamic vinegar, sprinkle with pepper, and bake. I like to use: eggplant, asparagus, green peppers, onion, celery, garlic, etc.

My most favorite are roasted veggies and HM soup made with them: whenever I roast any meat now, I surround them with a mixture of veggies like onions, carrots, parsnips, winter turnip, celery, green & yellow beans, broccoli and/or cauliflower, sweet potatoes, etc. I put the leftovers in small plastic containers with some of the broth and freeze them for soups all week.

Today, to one container, I added diced zucchini, navy beans, mini-lentils, and 4 x dumplings (perogies) and enuff broth to make 1 liter of soup. When the dumplings rose to the surface, I mashed it leaving some chunks for a nice thick soup. We try to have a version of HM soup at least 3-4 times a week now.

I make healthy vegetarian enchiladas. I use La Tortilla Factory tortilla wraps. They are 12" in diameter but only 100 calories, and half your daily fiber in just one! They actually taste good, too. I use zero-calorie spray to fry up green and red bell pepper, onion, cilantro and black beans. Squeeze a little lime juice over the mixture, fill the tortillas, pour on a little green enchilada sauce and a sprinkle of lowfat mexican cheese and warm in the oven until the cheese is melted. Just one of those fills me up, and if not I add a salad on the side. There are only about 250 calories in one, and they are HUGE and delicious. I will also put some diced fresh tomato and/or avocado on top for fun, or a dollop of fat free sour cream.
