Smashed Pea Spread

Makes 4 servings
Ingredients
10 ounces peas, fresh or frozen
3 tablespoons extra-virgin olive oil or butter
1/4 cup finely grated fresh Parmigiano-Reggiano
Fresh lemon juice to taste
Directions
1. Cook peas in boiling salted water until just tender, 3 minutes. Drain peas and pulse in a food processor with remaining ingredients until a coarse paste forms. Season with salt and pepper and serve spread on toast. Makes 4 servings.


I even knew it was Karen's post. My brain is sooooo gone lately. 
I should get some more celery and laughing cow cheese. That is a snack I loved when I was doing South Beach. Yum Yum! I guess I don't stay prepared for those snack attacks. I let the pantry and the fridge run low and then complain when there's nothing healthy to eat.
