Stir fry is my favorite way to use up all the leftover veggies in the fridge before they go bad. I throw in onion, green pepper, broccoli, edamame, snow peas, mushrooms, chicken or steak, carrots and cook it all in a big skillet.
Throw it over some brown rice and i'm done. I sometimes use the birds eye brown rice you can microwave , but typically i just use the uncle ben's brown rice that you cook for five min, then let sit for five min, its fairly easy. Top with lite soy sauce. Yummy, i think i might eat that for lunch tomorrow.
