Ok so now onto healthy meals. I tend to make a lot of WW core recipes because I find them to be full of veges and lean meat. I made a slammin Slow-Cooker Chicken Cacciatore the other night and once a week I usually make slow-cooker greek chicken.
Slow-Cooker Chicken Cacciatore:
8 Chicken Thighs, boneless skinless (about 2 pounds)
3/4 teaspoon Salt
1/4 teaspoon fresh ground pepper
1 1/2 teaspoons dried Italian seasoning
3 teaspoons olive oil
2 assorted bell peppers, such as red and green, seeded and chopped
1 onion, chopped
2 celery stalks, chopped
2 carrots, thinly sliced (I chunk them)
1 28oz can of Plum Tomatoes, chopped
1/4 pound fresh white mushrooms, sliced
4 garlic cloves, minced
1. Sprinkle the chicken with half teaspoon of salt and 1/8 teaspoon of pepper. Heat 2 teaspoons of the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until browned, about 3 minutes each side. Move chicken to the slow cooker (5-6 quart slow cooker).
2. Heat the remaining teaspoon of oil in the skillet. Add the bell peppers, onion, carrots, celery, tomatoes, mushrooms, Italian seasoning, garlic, and remaining salt and pepper to the skillet. Cook until the vegetables are softened. Transfer mixture to slow cooker; mix well. Cover and cook until the chicken and veggies are fork tender, 3-4 hours on high or 6-8 on low. (Low is better)
Greek Chicken:
6 medium-sized potatoes, quartered
3 lbs. chicken thighs, boneless skinless
2 large onions, quartered
1 whole bulb garlic, minced
1/2 cup water
3 tsp. dried oregano
1 tsp. salt
1/2 tsp. black pepper
1 Tbsp. olive oil
1. Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic.
2. In small bowl mix water with oregano, salt, and pepper.
3. Pour over chicken and potatoes. Top with oil.
4. Cover. Cook on high 5-6 hours or on low 9-10 hours
